This is the second time since he won the world championship that he has returned to Shanghai at the invitation of the "baker" to host the international master class. Can you imagine a rookie who has only studied coffee for three years to win the World Cup Coffee Competition?
At the "World Cup Bean Baking Competition" (World Coffee Roasting Championship) held in Shanghai at the end of March 2016, there were a large number of experts from all over the world. Before the competition, the most favored were the previous year's world runner-up, Sweden's Joanna Alm, Britain's Matthew Robley-Siemonsma, and Italy, South Korea, Japan, and Russia, but finally ran a dark horse, representing Romania's Alexandru Niculae to beat the heroes. Dmitry Boroda, the chief baker of Double B, Russia, by one point.
Alexandru Niculae, who is only 30 years old, studied coffee for only three years before winning the world championship. Speaking of the cause of exposure to coffee, in 2013, he and his girlfriend worked in a small restaurant. Once his girlfriend's sister came to the store, and he made a cappuccino for guests. As a result, his sister saved his face on the spot and said that it was not a cappuccino. Then he demonstrated how the real Cabo did, and he knew that the world of coffee was far beyond his imagination. Then he went to Miami, USA, to visit his girlfriend's sister's house, and happened to have the opportunity to go to the only coffee roaster nearby. After drinking the amazing coffee, he decided to learn to be a bean baker!
Over the past three years, he studied hard, studied almost everything by himself, bought books, attended seminars at home and abroad, imported dozens of different kinds of beans from more than a dozen countries, and constantly practiced baking. Even in Bucharest, Romania, resources are not necessarily so abundant. It can't stop his fanaticism. What's his study secret? In fact, through the competition, "learn from competitors, whether it's baking or cooking." In 2015, he won the Romanian Baking Bean Championship for the first time. He ranked eighth in the World Baking Bean Competition held in Sweden, and the result was not satisfactory. The champion of that year was Norway's Oden Sobotan.
Last year, 2016 Alexandru made a comeback, once again won the Romanian championship, and won the world championship!
In Romania, most people are still used to drinking espresso, while the coffee in the supermarket is usually roasted deeply because of its poor quality, masking the bad flavor of the coffee. According to Alexandru, good coffee is absolutely not bitter, has a well-balanced flavor, is fully developed, and is so sweet that it doesn't even need sugar. But the popular Nordic baking does not satisfy Alex: "if the baking is too shallow, sometimes there is a risk of incomplete development." "
Over the past year, Alexandru has held seminars around the world to communicate with bean bakers from different countries. now he has rich teaching experience and a more in-depth understanding of the characteristics of different bean roasters. In this special training camp, he will share his baking skills and learning without reservation!
