"Rwanda" is a country located in southwestern Africa, perhaps because of geographical factors, or because of different varieties, and the whole coffee flavor is quite different from that of beans in East Africa.
Vaca Cooperative is located in Budare province in the south of Rwanda, with a planting height of about 1400 to 1600 meters. Most of the crops planted are BM-139 bourbon. Most of the members of the cooperative are women. They are very careful in handling the harvested coffee cherries. All of them are washed, and after a series of complicated processes, they finally put them on the high scaffolding. The cost of building such a scaffolding is relatively high, but the quality of coffee beans has been greatly improved, not only to prevent pollution caused by contamination on the ground, but also because there is good ventilation above and below, so that the coffee can be dried more evenly and more quickly during the drying process.
The dried aroma is the sweetness of sweet cream caramel, molasses and toast. The wet aroma after adding hot water is strong maltose, beer, spices and flower honey.
The cup is bright, with oranges and spices, with a hint of wheat tea. When it cools, it turns into a new set of flavors; cherries and baked apples, cola, caramel, cranberries. It's obviously sweeter-the whole flavor is three-dimensional, and it changes from day to day from the beginning of baking to the beginning of hot cooking to the cold flavor, which is a wonderful coffee! --
