El Salvador is the smallest country in Central America and the most densely populated country. Coffee beans are harvested only once a year, between November and February of the following year, so newly harvested coffee is usually shipped to foreign coffee buyers from June to August. Compared with coffee farms in other Central and South American countries, most of the farms in El Salvador are medium-sized. With great enthusiasm and expertise, farmers produce high-quality coffee cherries, which has boomed the coffee export market and improved the quality of coffee beans, as Salvadorans say, as long as you take a sip of coffee and you smile.

HIQ (High Quality), as its name implies, is a high-quality coffee bean, a development program to help improve the quality of small farms. Similar to the Ethiopian Red Cherry program, HIQ will look for special high-quality farms such as miniature, variety, treatment, climate, etc., and then educate farmers to comply with HIQ production standards, including measuring the sugar content of coffee cherries and maintaining organic care for the environment. Its farms have built updated processing equipment to make the whole process comply with HIQ standards, but only a cup of coffee with a score of 85 or more is called HIQ coffee. HIQ currently has cooperative coaching farms in El Salvador, Panama and Ethiopia. Founded in 1888 and now in charge of farm management, Jos e Guillermo Alvarez Prunera and his sister are fourth-generation coffee growers who produced the best coffee in El Salvador in the early 20th century.
