Robert Lamastus founded Elida Estate in the early 20th century, when he worked for the Panama Canal and heard that Boquete was particularly suitable for growing coffee, so he bought it. Now the estate is run by his grandson Wilford Lamastus, and thanks to Wilford's efforts, Alida has become the premier estate in Panama, often on the final bidding list for "Best Panama". Half of the area is in the "Baru Volcano National Park" (Volcan Baru National Park), is an ecological conservation area, so it has become a habitat for many animals and plants, a variety of rare mammals such as leopards, birds such as long-tailed birds can be seen, the biodiversity is very rich. Baru Volcano is also one of the highest volcanoes in Central America, with seven microclimates at different elevations.

Alida's coffee is only 1850 meters high, and coffee is grown no higher than that in Panama. The rainy season is very long and can last from May to November, with annual rainfall as high as 2400mm and sunny periods from late February to early May. Even in the dry season, the mountains are foggy and humid, with relatively low temperatures and colder nights. Coffee is covered by cloud-shrouded primeval forest all the year round and has a good shade planting environment. Coffee trees in Ilida take longer to harvest from planting saplings, about four and a half to five and a half years (two or three years longer than usual), and the low temperature environment also makes cherries take an extra month to ripen. These factors form the special flavor of coffee. Most of the estates are washed with cherries, and a few are treated by the sun. The method of sun treatment is to leave the coffee beans in the pulp to dry together, so that the taste of the flesh can easily seep into the beans.

In order to dry, the cherry fruit will be moved from the higher altitude planting park to the lower altitude, warmer sun field, which will last for 10 to 12 days. Compared with washing beans, the sun usually has a thicker taste, but the biggest challenge is the fermentation process during the sun exposure. Alida's sun treatment is very delicate, and you can get coffee with complex flavor, strong fruit flavor and full aroma. especially more experienced in dealing with traditional beans iron than card and Kaduai.

In the sun treatment, it will be treated separately according to the harvest date, so each batch is harvested and processed on the same day, with an average of five bags per batch. After about 10-12 days of low-temperature sun exposure, shell beans will be stored in 10-12 ℃ storage for 75-12 days, and will not be shelled and hand-selected until the week of shipment. Choose beans for Taiwan district champion Wu Zelin, who finished seventh in the 2014 WBC World Championships. ​
