After today's cooking test, we finally confirmed the launch of this new bean. This may be our favorite Rwandan coffee since we came into contact with coffee!

Shyira is a new processing plant built this year in the Nybihu production area of the western province of Rwanda. Although it is a newly built treatment plant, its equipment and management are of considerable scale. The altitude of the treatment plant itself is 2000m, and the altitude of the coffee fruit it treats is even 2400m. At such a high altitude, the ripening time of the coffee fruit is longer, and the coffee has a higher intensity of flavor and sweetness.

The Shyira treatment plant itself is located by the river, so there is less need to worry about the water resources in the treatment process. During the process, the staff of the Shyira processing plant will sing the factory song of the Shyira processing plant, as if it was a unique ceremony to bring the soul into the coffee fruit. In different stages of treatment, it will be fixed to stir, on the one hand, it can remove defective beans, on the other hand, it can remove the pectin residue on coffee beans.

This way of handling makes the bean Shyira very bright and clean. The flavors are citrus, jasmine, green tea, pineapple and Brazilian berries. Cleanliness and permeability are one of the selling points of this bean, as well as the amazing sweetness of marshmallow.
