Elida is located in the Boquete of Chiriqui, a province on the western border of Panama. The most famous landmark and tourist attraction of the province is the Baru volcano, which is 3300 meters above sea level. Baru volcano is one of the highest volcanoes in Central America, with a total area of about 14000 hectares and can be divided into seven different microclimate zones according to altitude. The volcano is inhabited by many rare plants, birds and mammals, so it is protected by national parks and forbids hunting and man-made development and destruction.
The Pokuit region is located on the eastern side of Mount Baru, a valley of lava flowing through Panama, next to another well-known coffee producing area in Panama, the Vulcan Valley (Volcan Valley). Poquet has always been the most high-profile coffee producing area in Panama. There are many world-famous estates in the area-Emerald Manor (Esmeralda), Hartman of the Best of Panama Victory Army, Mama Cata, Kotowa and Santa Teresa. Etc., and Alida Manor itself is one of the heavyweight star estates in Pokuit.
In the last five years, he has won Best of Panama awards with outstanding achievements, second only to the Jade Manor (Esmeralda).
Elida, owned by the Wilford Lamastus family, began to grow coffee in 1918. In addition to growing coffee in the garden, there is now another donkey estate (El Burro) in addition to Elida, which is also located in the Haoshan Haoshui Boguit area. More than half of the planted area is included in the Baru Volcano National Park, so it can retain a rather primitive ecological environment. Balu volcano is one of the highest volcanoes in Central America. Due to the difference in altitude, the whole volcanic area has more than seven micro-climatic environments.
The coffee planting area of Little Donkey Manor (El Burro) falls at an extremely high altitude of about 1800 meters, and the temperature is low enough, coupled with clouds in the dry season, primitive forest as shade, and cold at night, so it takes four and a half to five and a half years for a coffee tree to begin to produce fruit (two to three years more mature than a coffee tree planted in a normal environment). The ripening of coffee cherries can be delayed for about a month, and the development is more complete. The two estates will be able to bid for a total of seven beans in 2015. In addition to coffee, many native tree species have also been planted, which not only shade the coffee, but also protect the ecology of the wild. The family treats coffee trees with artificial fertilization and refuses to use environmentally damaging herbicides and pesticides. In addition to Kaduai, Tibica and Bourbon, the current coffee trees also began to grow geisha a few years ago. Even though there are many varieties of coffee in the manor, Kaduai is still used to participate in the Best of Panama competition, and the achievements are repeated, which shows the excellent geographical environment and processing technology of the manor. Alida Manor itself is a star estate in the Poquet region and is one of the two highest coffee estates in Panama (the other estate with such elevations should be Carmen in the Vulcan Valley).
The estate covers a total area of 65 hectares, more than half of which are located in Baru Volcano National Park, of which only 30 hectares grow coffee and 35 hectares are virgin forests. Due to its high altitude, years of low temperature delayed the ripening of coffee berries, but also because it was located near the volcano, the volcanic soil provided rich nutrients for the cultivation of coffee, so that the manor coffee beans could achieve good results in the competition. This batch of coffee is a Catuai variety with the purest original flavor. Because of Alida Manor's unique coffee processing technology, this batch of coffee is different from the previous washing treatment, using sun treatment. Extracted from the high-altitude Catuai variety of coffee beans with strong humidity, the most traditional sun treatment is more appropriate than the more famous washing treatment at Alida Manor.

Qianjie coffee is recommended for brewing by hand.
[V60]
Because the ribs of the V60 filter cup are distributed in a curved shape from top to bottom, and the length is different, the exhaust is more smooth and the flow rate is faster when brewing, and because of this, the flavor level of the extracted coffee is more obvious. while the flavor level of Rosa Xia is also relatively rich, the brewing method of Qianjie coffee will use segmented extraction to increase the extraction rate of beans.
Parameters & techniques: grind degree 5R (Chinese standard No. 20 screen pass rate 58%), water temperature 90 ℃, powder / water ratio 1: 15; steam 30 grams with 30 grams of water for 30 seconds, water injection to 125g section, water level drop is about to expose the powder bed, continue water injection to 226g stop, water level drop is about to expose the powder bed to remove the filter cup.
