El Fog Into Gorge Urrutia

The history of Urrutia Farm dates back to the 1870s, when Juan Urrutia planted the first coffee trees and harvested the first 27 bags of coffee cherries on high-altitude volcanic soil. As time passed, the number of coffee trees grown on the farm gradually increased, and the quality of coffee produced became better and better year by year. For three consecutive years in 2006, 2007 and 2008, Fog Into Gorge won the El Salvador Extraordinary Cup, as evidenced by this!

Flowers bloom from April to mid-May, harvest season from November to February, regular application of organic fertilizer, chemical fertilizer only twice a year, especially small amounts of nutrients, through plant restructuring, coffee trees on the farm will not be older than 20 years. Fog Into Gorge Farm is 100% shade, local orchids and Copalchi are planted every year to prevent rot, and shade trees are also good for windbreaks.

During harvest season, cherries are harvested in the morning and processed immediately in the afternoon. This coffee is honey treated and processed at the San Antonio Mill. Cherries must first ripen and be harvested at their best color to get the perfect coffee sweetness. After harvest on each harvest day, the selected fruits are collected and placed in an electric peeler. The fruits are spread on African trellises with pectin and exposed to the sun.

Depending on weather conditions, it usually takes 10-12 days to dry, and at the end of this drying phase, the moisture content of the beans is about 12%. Compared with the traditional washing process, honey treatment does not use water, each bag of 60kg raw beans can save 2000 liters of water, but also because there is no need to keep an eye on it at all times, it can also reduce the use of electricity, which makes honey treatment the most environmentally friendly treatment method. Because pectin is still attached to the fruit during drying stage, it forms unique sweetness, fruit flavor and aroma. When roasting honey coffee, it is necessary to develop a suitable roasting curve in order to fully display the uniqueness of this coffee.
