Why are there so many names for Indonesian coffee mantinen?

There are really many names for mantelin on the market. Gold mantelin and Ding Shang Gold mantelin, Tiger mantelin, Horse Face mantelin, Emerald mantelin. In fact, mantelin is not the name of the producing area, place name, port name or coffee variety. Its name is actually a pronunciation error of Indonesian mantelin mandheling nationality.

Locals, coffee beans widely grown in Sumatra and other Indonesian islands, almost all called mantenin, according to the region is different, the bean traders are different, use these names to distinguish between different regions mantenin.

Many years ago, we heard the legend that there is a sweet osmanthus flavor in Indonesian coffee flavor, but we have never drunk it. Until 2014, I finally got a bean with obvious osmanthus fragrance from Sulawesi, Indonesia. Its name is Tonaga PB, and its variety is iron pickup truck, which surprised many people.

But in the following three years, we never met osmanthus flavor beans_Speciality, fine coffee is so inch, so strange, even if it is the same variety on the same land, the beans produced every year may be different.

Remember, remember. In June 2017, it was also a very accidental opportunity to drink a sample of osmanthus tiger on our shelves. At that time, we caught the familiar osmanthus flavor, repeatedly tested and confirmed, and decisively purchased. We finally had the opportunity to share coffee with osmanthus flavor! And we know for sure that this is probably the highest quality Indonesian bean available on the market.

Sure enough, Osmanthus Tiger became our sales champion, and many customers came directly to Osmanthus Tiger. After the 2017 season of osmanthus tigers sold out, we have been looking for and testing-are there any beans with the same raw bean quality?

In 2018, due to natural disasters in Indonesia's coffee-producing areas, the harvest of Mantenin coffee was several months later than in previous years, and a large reduction in production. We were not sure whether we could put osmanthus tiger on shelves this year until we received samples from suppliers at the end of July. After baking samples and testing samples, we found familiar osmanthus flavor again! It can be said that the osmanthus tiger of frog in 2018 still maintains the same level, because the quality of raw beans is still the same as before!

A tiger sniffs osmanthus flowers

Osmanthus tiger is Indonesia Sumatra coffee producing area mantenin coffee, most of the mantenin on the market will be presented to everyone in the way of deep roasting, the specific cup performance is: taste mainly bitter; high body; flavor to nuts, dark chocolate mainly, may also have burnt taste.

However, the exceptionally good mantning dared to express himself with medium baking! We present osmanthus tiger with medium baking to show mainly sweet taste; osmanthus flavor, roasted nut flavor, and also Indonesian mantining native woody flavor.

- Sweet.

After drinking "bitter coffee" for so many years, osmanthus tiger is a "sweet coffee" that breaks the traditional concept. Taste buds located at the tip of the tongue can concentrate on sweet taste, taste buds located at the side of the tongue can sense sour taste, and taste buds located at the root of the tongue can sense bitter taste. When drinking this osmanthus tiger, the tip of the tongue can feel the sweetness is extremely high, the root of the tongue vaguely feels a bit bitter_biological instinct is sweet and bitter, so this coffee brings a very high degree of pleasure.

Many people don't understand where the "sweet" in coffee comes from. In fact, the coffee beans we drink are the seeds wrapped in coffee cherries. If you are lucky enough to eat coffee cherries in the producing area, you will know how sweet coffee's previous life is. Caramelization during roasting can also sweeten coffee-in fact, the sweeter the coffee, the sweeter the coffee, and sweetness is an important dimension in judging coffee in green bean competitions. (Sugar in coffee doesn't count.)

- Osmanthus flavor

We accumulated a lot of flavor memory in the process of more than 40 periods of cup test training, osmanthus flavor is one of the classic cases.

To the Yangtze River limit, south of the Yangtze River there are a large number of osmanthus trees growing places students often bring their own osmanthus flavor memory, a drink to immediately can blurt out: good obvious osmanthus flavor. Students in areas north of the Yangtze River where osmanthus trees do not grow will be worse. Even if they drink this flavor, they cannot express it because there is no memory of osmanthus flavor stored in their heads.

Why does coffee smell like flowers? The flower fragrance of coffee beans itself is due to comprehensive factors such as variety, climate, soil, treatment, etc. The flower fragrance substances of raw beans themselves will be displayed after proper roasting by roasters. Even if there is a little flaw in roasting, it is possible to miss the flower fragrance. It can be said that the flower fragrance is a great affirmation and gift to the roaster's work.
