Torima Alfredo Leyton Mirado Farm

Colombia is a country of small coffee farmers. This coffee comes from Alfredo Leyton, a small farmer whose farm is called El Mirador in Tolima.

The vast majority of coffee producers in Colombia are small farmers, belonging to cooperatives or associations. Cafisur handles Afro coffee. Cafisur has five local places to collect fresh coffee, all in the south of Torima. It is extremely remote. Some places are close to the state border between Cauca and Huila. Transportation is inconvenient, but Cafisur has focused on micro-batches for seven years.

Three years ago, they even launched the "Programa de Finca" program to encourage coffee farmers to improve their quality. The amount of green beans that each coffee farmer can produce is quite limited, and the yield varies, ranging from 300 kg to 3000 kg of shelled beans per season, with an average of 700 kg per farmer. Batches from different collection sites and farmers are completely separated to ensure traceability. This program benefits many small farms that value quality.

Cafisur has very good cup testing equipment, well-trained cup testers, quality control system. They screen for good quality coffee, provide samples to foreign green bean dealers, and decide which to blend and which to maintain independent microbatches. Pay coffee farmers better based on cup test scores, straight into their pockets.

Torima's main growing season is June, and the actual harvest time is about June and July. Unlike other producing areas in Colombia, Torima has only one harvest season.

Baking advice:

Colombia Kadura seeds are planted at high altitude, hard beans, suitable for balanced baking, fried in standard baking mode, 20% into the bean damper, 50% brown point damper, 80% explosion damper, fire can be adjusted according to ROR conditions, adjustment range is about 5%, it is recommended to bake until the end of the first explosion can be beans, baking degree is light.
