Nanochala Nano Challa Cooperative
Nano Challa is a fairly new cooperative. Founded in 2010, Gera, based in Agaro, has only recently begun to be known for its strong and clean unique flavor. The vast majority of coffee grows above 2000 meters above sea level and is grown by small farmers with an average of only half a hectare of farmland, mostly traditional varieties, as well as "1274" improved from the original species. Almost all coffee in Ethiopia is organic farming, but it is not certified.
The Norachala Cooperative was established with the help of Technoserve, a non-profit organization founded by the Bill Gates and Miranda Foundation (Melinda Gates foundation), which not only trains cooperatives in how to manage and organize, but also finds markets for them, with the goal of substantially increasing the income of cooperative members and improving the quality of their coffee. When the small farmers give the coffee to the cooperative, they first get part of the income, and then when the cooperative sells the coffee and the price is determined, the member small farmers will get the second payment. This system is of great help in raising the income of farmers. There are currently 408 members participating in the Norachala Cooperative.
The cherry harvest is carried out manually, and the unqualified fruit is removed by manual screening. After being sent to the washing plant, the Penagos ecological peeling machine (Eco Pulper) is used to remove the peel and pulp, as well as pectin. Because this machine has the function of removing pectin, Norachala does not have to use a fermentation tank to decompose the pectin like other Ethiopian washing plants. After removing the pectin mechanically, it can be soaked in clean water for 3-10 hours to dry. Before drying, leave it in the shade for 6 hours, let the water on the surface of the shell beans drain, and then move to an African viaduct to dry in the sun for 10 days.
