Hacienda Mallorca is managed by Santiago Londoño, owned by his father and uncle, who has been growing coffee since 1932, in Valle del Cauca, close to the neighboring border town of Caicedonia, where his family has been producing a lot of green coffee for many years and owns several estates. To manage the estate Santiago had to adopt new green bean treatments, such as sun and honey treatments, both to experiment with different treatments for special flavors and to diversify its products to meet market demand. Santiago's method of managing the estate focuses on the details of each production batch to improve the quality and traceability of coffee production. Set up a constant temperature warehouse, and store each batch of raw beans at 19 degrees C. Each batch of raw beans stored in the warehouse will be sent to the neighboring quality testing company Café Y Procesos to assist in cup testing and grading, and this company will also assist in grading and mixing the three mixed beans for sale in the market.
