The perfect Crema should be at least 4 cm thick, and it can't be blown lightly. When done correctly, if Crema turns golden or even white, it means the beans have been aged too long and expired. Observing Crema floating on the surface can also judge the operation of making Espresso, if the color is slightly yellow, white, the amount is small, the coffee flows out too fast, which indicates that the extraction pressure is too small, the extraction is insufficient, and finer grinding, tighter and more uniform packing is needed to increase the resistance of the coffee cake. If Crema is dark brown or even black, the flow is incoherent or even dripping, which indicates that the extraction resistance is too large, the pressure is too large, the extraction transition is insufficient for the whole coffee cake, and the powder is too fine, too tight, and too much.
