Saifeng pot, invented by British technician Napier, uses the physical siphon phenomenon to make coffee, so it is also called siphon pot or vacuum pot.
The use of the plug pot is simple: heat the lower pot with hot water, boil the water and put on the upper pot containing coffee powder. the hot water will enter the upper pot through a tube and mix with the coffee powder to extract the ingredients. Stop heating when the hot water is sucked into the upper pot, when the interior of the lower pot is in a vacuum, and the coffee liquid will be sucked into the lower pot.
This method of extraction can observe the whole extraction process, which is very interesting and used to be very popular in coffee shops. However, the coffee brewed in the Saifeng pot is relatively flat and monotonous, and the high temperature is easy to produce bitterness and astringency.
