How does the siphon pot work? Extraction principle:

High-temperature water vapor is produced by heating the water in the kettle, which expands when heated in an airtight siphon pot, and the air pressure pushes the water into the catheter and pumped it to the upper pot for extraction. When the lower pot stops heating, the air in the lower pot gradually cools and shrinks, while the coffee liquid in the upper pot flows down the pot because it loses the support of steam.
