The Nicaraguan province of New Bosnia and Herzegovina is home to many smallholder coffee farms, and this bumper Ally Coffee is pleased to serve coffee from two very special places: Santa Teresa Demogutton and La Ilusion.

Sylvio Sanchez (Silvio Sanchez) came to grow coffee as a young entrepreneur. Both he and his mother loved coffee, and after completing his agronomy degree, he began to work, looking for an ideal farm to grow coffee. They found the ideal property in the La Alliance of San Fernando in New Segovia: San Teresa Demogorton.

With his expertise as an agronomist, Silvio laid out plots of Catuai,Catimor and Java in the shade of pine trees. The tall pine trees cast a long shadow, filling the farm with a spectral atmosphere. The farm, which is 10 hectares high, is located on a remote road and feels lonely. Coffee trees flourish in quiet places, and their thick green leaves produce cherries, which turn bright red and dark yellow when ripe, and are picked during peak periods.

Santa Teresa de Mogoton's coffee reflects the special culture of the farm and is the result of careful planning and labor, as well as Silvio's attention to detail.

La Ilusion is a special farm. Farmer Francisco Valle is also the general manager of Expocamo, Ally's export partner in Nicaragua. Francisco has been working with local smallholder producers for years to improve quality from picking, processing and drying, thus establishing Expocamo as the primary source of specialty coffee from Jinotega,Madriz and Nueva Segovia.

However, even during his many administrative positions, Francisco maintained contact with land and agriculture. When he heard of a farm at 1750-1900 meters, he knew he had to see it to believe it. When he first visited La Ilusion, he knew that the name was the correct description of the farm. As the highest coffee growing place in Nicaragua, clouds hang over the coffee and shade trees on the farm.

The inconvenient transportation of the property plunged the farm into peace. When Francisco bought the farm a few years ago, the crops themselves were neglected, but he began to improve steadily by pruning and replanting trees, trimming shade trees and training harvesters to select the most ripe cherries. With the revival of the land, every harvest of coffee is improving.

Seven hectares of the farm is surrounded by primeval forest. The nearest town is Mozonte, which is on the road to the small city of Ocotal. Beyond Ocotal is the road leading to the Honduran border. The Catuai cherries on the farm have been fully washed and then processed, and some new varieties are being developed.
