Ecological Coffee Story of Catova Manor in Panama the flavor characteristics of Kaddura Kaduai coffee bean cup
Located in the plateau area on the west side of Bokuidi, the manor is facing west to the south, but it is on the other side of Duncan Manor, nearly 1,800 meters above sea level. Due to topographic factors, there is a longer dry season and less rainfall. Tanghe Manor is basically managed from an organic ecological point of view, because it is located on the other side of the ridge, the soil and micro-environment is obviously different from Duncan Manor, where the soil needs to add some alkaline fertilizer, especially during the ripening stage of coffee cherries. Therefore, calcium and magnesium fertilizers will be applied at the right time to increase the amino acids in the fruit and promote the development of coffee flavor. at the same time, it is very important for high-quality fruit acid and increase the density of the fruit, but no herbicides, pesticides and other chemicals are used. The flavor characteristics of Tanghe Manor can be summarized as follows:
Elegant aromas of cabbage, chocolate, citrus acidity and sweetness, berry and red fruit aftertaste, advanced honey bean flavor and aroma, dried plum and high-grade clean ripe fruit aftertaste Riley flower flavor, blooming tropical fruit complex flavor, especially orange and spinach dream fruit aroma.
Kotowa Farm is the third generation, with several excellent plots of land. We had the privilege of visiting Kotowa's farm, their old wet mills and their wonderful home overlooking the beautiful Boquete hillside and the Baru volcano. Ricardo Koyner also has coffee shops in Panama City and other parts of Panama, so most of Kotowa's products are used domestically, reducing exports. In 2016, Cafe Kotowa won the Best producer of the 3rd Panama Cup in recognition of the producer whose coffee entered the final round of each category of the best competition in Panama.
This is a purebred coffee at an affordable price. Cafe Kotowa has performed impressively in recent Panamanian coffee competitions, winning third place in the "traditional Nature" category last year for its Caturra category and three awards in different categories in 2018 and 2017.
In 2006, the National Environment Agency awarded Kotowa Coffee the winner of the Panamanian National Award for "Environmental cleanest Industry of the year". They provide free medical services for workers and nurseries and school courses for children.
