Recently, a small friend asked whether it is necessary to steam when making ear-hanging coffee. This issue of coffee brewing laboratory to verify whether there is a need for muggy coffee!
First of all, the experiment was carried out with the Yega Xuefei hanging ear coffee bag of Qianjie Coffee. One bag of hanging ears contains 10g pre-ground coffee powder. The water temperature is 90 degrees Celsius and the target amount of coffee is 150 milliliters. One group of steaming was carefully compared with the other group of non-stuffy steaming and water injection.
Experimental process
Steaming the actual operation text version: prepare a cup, tear open the outer packing bag of the hanging ear coffee bag, inside is a white coffee filter bag, tear it along the line of "Open", open the "ears" at both ends of the filter bag, and hang it on the cup.
The first stage of water injection, as long as the coffee powder layer is completely wet, carry on a 30s steaming. Steaming did not bulge too big "hamburger", a small amount of coffee liquid flushed out of the filter bag.
After the stuffy steaming, the second water injection is carried out, and the small water flow is filled directly around the circle. Wait for the powder layer to drop slightly and continue to fill it, repeatedly, until the coffee capacity in the cup reaches about 140-150 ml, then the ear bag can be removed.

Flavor comparison
Steaming: after steaming, the coffee particles after exhaust gas can be evenly absorbed and saturated, so that the subsequent extraction is more uniform, the flavor of coffee is more rich, and the flavor of citrus and berries can be reflected.
Not steaming: the way of direct water injection tastes quite similar, with citrus and berry flavor, but it will be lighter, stronger water sense and more sour senses.
Although hanging-ear coffee is launched for simplicity, on water injection, a small amount of water can wet the coffee powder and then brew it to extract the coffee more fully. With a small move, you can get a cup of coffee with a better experience in 30 seconds. Why not!
