When I was down and out as a cafe, and when I put money into it every month, I planned to write a book, "how to Open a Cafe," and we all died together. The content of the book includes questions such as which brand of coffee machine you should choose, which kind of water purification system you should choose, the depth and height of the bar, how to consider water and electricity in a coffee shop, and which kind of lamp can have a better atmosphere and color rendering. I want to set a precedent for hard-line teaching books. It's not those coffee textbooks at all. I'll always tell you where the beans are better and how to pull flowers, which is a biased to the extreme teaching method.

Later, when it gradually became flat, the mind faded.

Of the 100 people who are clamoring to open a coffee shop, five will eventually open a coffee shop. Five years later, a cafe is still open. I am one of those 100 people. It's hard for you to live a leisurely life. On the other hand, if an independent cafe can make money, the first thing on the boss's mind is to open a chain, even better if it can be listed.

One advantage of going deep into an industry is that it makes you less impetuous. Because when you really understand one thing, you will find that there is no really well-developed discipline in the world except mathematics. Human civilization is still in a period of rise, our understanding of almost everything is only partial, incomplete, or even rough, and there is more room for improvement. This will make you humble, because you know that even if you are half an expert now, the knowledge you have gained is still negotiable, isn't it a good harvest? For example, there are thousands of subspecies of coffee in Ethiopia that have not yet been developed and studied, while the natural decaffeinated tree was recently discovered by a Japanese who spent more than a decade speculating and searching for it. In the past, it was generally believed that there was no such thing.

Coffee is not the more expensive the better, many affordable coffee has a good taste that people are infatuated with for a lifetime. The high price of coffee is mainly due to the scarcity of production, such as Blue Mountain and St. Helena Island coffee. And wine, tea, cigars, almost all the better the more expensive, so coffee lovers' happiness index is obviously much higher.

The owner of the cafe should love coffee, be enthusiastic, not too concerned about cost, not too idealistic. I have opened a coffee shop for more than five years and changed coffee five times, which is basically better and better each time, but I have also had the experience of changing one kind of coffee and returning to the previous one two months later. Even if you use very good coffee beans, there will still be customers who think they are coffee experts with a piece of wood in their mouths to tell you that your coffee is not good, and always remember that no matter what industry you are in, stupid is a matter of concentration.

I think my coffee shop is not pure enough. A real coffee shop should be like my friend's hotel in Dali, where guests come to his door and keep talking about his shop. Finally, when he asks if there is a room, he and the staff answer at the same time that he said no, and the staff said yes. He glared at the staff and told the guests without blushing that the staff had made a mistake and that there was no room left. I thought a real cafe was supposed to pick guests. It didn't receive guests it didn't like.

Coffee and a coffee shop are two different things, and so are good coffee and a good coffee shop. In China, if you want to open a profitable coffee shop, you can't open a good coffee shop. Personally, I am inclined to this view: Starbucks is not a coffee shop, it is a coffee shop. What are the advantages of being a cafe? As far as my experience is concerned, first of all, my wife and I met in the store, only this one has been very inspirational. A cafe will give you some confidence in a boring city and some recognition from nothingness. Even if you own a house you buy, you won't get such blessings and blessings. The relationship between the city and the individual needs a balance. The problem in China now is that the city is too strong and the individual is too weak. The former is like a wind-up monster, expanding, renewing, redeveloping, completely changing its blood in 5 to 10 years, knocking down the houses, replacing the streets, and shutting down the shops. The cafe is the opposite of this kind of fast and updated, it stands on the "slow" side, on the "constant" side. If you're on this side, you'll get some kind of sense of security, whether it's fake or real. Human beings are also partly emotional animals, while completely rational people do not go to cafes at all, or should not be born at all.

I have a friend who loves to travel, tall and popular with women. When I was sitting in my cafe chatting, he told me that he seemed to know the man at the window. When he went up to talk, the other party looked at him for a long time and suddenly shouted, "Why have you become so fat?" The friend sitting at the window used to run an outdoor store, the earliest one in Shanghai. They were separated after closing 10 years ago, and finally met in my cafe. This reunion gives me a sense of vanity in a sense.
