Hank Coffee is located next to Dayuanbai in Hsinchu. It takes about 20 minutes to get there by car from Hsinchu High Speed Railway Station.

Hank Coffee has a large conspicuous red sign, which is very easy to identify and will not be missed because it is not noticed.

The decoration in the coffee shop is very simple and low-key, and the first thing that attracts the editor's attention when entering the shop is this very large coffee work bar, which is not only the main core work area for Hank Coffee brewing, but also includes the service of providing customers with the experience of hand-brewing coffee. Consumers who enter the store or want to take out coffee can brew a cup of hand-brewed coffee at this work bar, and all the equipment and materials needed for this experience service will be prepared by Hank Coffee first, and then by professional coffee brewers to assist in reminding of all the brewing process and details. What if you think your hand-brewed coffee doesn't taste as good as expected? It doesn't matter, at this time, you can invite professional coffee brewers to brew a cup of hand-made coffee for consumers again, and this cup of coffee will not charge any fee.

There is a whole display area next to the work bar, and all the shelves display coffee beans and other coffee-related products and utensils sold by Hank Coffee. All the coffee beans used and sold here belong to Hank Coffee's own baked beans, and these various kinds of coffee beans are mainly roasted to medium and shallow roasting.

In addition to the general retail coffee beans are mostly presented in bags, the coffee beans here are also sold in cans, providing consumers with different purchase options.

The cans containing coffee beans are properly sealed and fresh-keeping, and the pull-ring type can opening design is also a relatively rare design on the market.

The drinking water in the coffee shop is provided to consumers on their own in a self-help way.

Except for the guest seating area outside the work bar, the space of the whole coffee shop is not too large, including the seats in the bar area, it can hold about 20 people at the same time.

Another highlight of Hank Coffee is the Hans Audio vacuum tube expansion stereo, hidden in the middle of the work bar. I think very few coffee shops are willing to spend money on stereos. Also because of this expander, during the interview, you can always feel the great music effect around the whole space field.

Since it is a coffee shop, of course, there can be no lack of diners. The Italian coffee machine used in the shop is elegant and eye-catching, and the bright stainless steel and white tones are very conspicuous.

What Hank Coffee is going to share with us this time is the brewing of hand-brewed coffee. As long as we can grasp a few simple points when brewing hand-brewed coffee, we can brew a certain level of hand-brewed coffee at home. The partner who demonstrated the whole brewing process for us this time was Julia, a professional coffee maker of Hank Coffee, and then followed her into the beautiful world of hand-brewed coffee.

First of all, put the selected coffee beans into the bean grinder, and then grind the coffee beans, this time the selected coffee beans are Antigua from Central America.

Because there are very slight differences in the standards of hand-brewed coffee, the content of hand-brewed coffee shared this time will be based on the standard normally operated in Hank Coffee. Because the coffee beans baked by Hank Coffee are mostly medium-and light-roasted, the coffee powder they use in hand-brewed coffee is also relatively fine, and the thickness scale of the bean grinder will be adjusted to 2.5 for grinding.

When the coffee powder is ground, it can be poured directly into the tapered coffee filter paper, and then you are ready to start brewing. Hank Coffee follows the golden cup theory and uses 16 grams of coffee powder as the base to extract 200ml coffee liquid to drink.

According to the hand brewing standard of Hank Coffee, they brew the hand coffee with hot water at 95 degrees Celsius. Before preparing to start brewing, Julia pours a small amount of hot water on top of the coffee powder for steaming, which not only allows the coffee powder to absorb enough water, but also releases the aroma of the coffee by steaming.

We can see that after about 10 seconds of steaming, the tapered filter paper gradually absorbs the water just poured in, and the whole steaming time can be caught between 25 and 30 seconds until the steaming is almost finished. the part where you can start cooking.

Hank Coffee has always adhered to the concept of healthy brewing, that is, hand-brewed coffee is brewed with the three elements of high temperature, fine scale and short time. It is also brewed in a clockwise direction and a steady flow rate. Julia also mentioned that in this way, in addition to bringing out more antioxidants (chlorogenic acid) and aroma, it can also reduce the release of excessive caffeine.

After brewing, the coffee powder shows a sunken state in the middle. At the same time, it can be seen that after brewing coffee, some silver impurities and bubbles stay on the wall of coffee powder after extraction, and do not let impurities flow into the coffee liquid because of brewing.

After brewing and extraction, the coffee liquid shows a deep dark brown color.

The finished coffee will be presented in the form of iced coffee and hot coffee respectively. the main purpose is to enable consumers to compare coffee at different temperatures by drinking coffee at different temperatures. and at the same time feel the fineness and richness of the flavor of a single item of coffee beans.

Each hand-brewed coffee will also be accompanied by a snack, which will be replaced at different times.

Iced coffee is even clearer and brighter under the light of natural light.

First of all, share the part of Antigua coffee in Guatemala. The overall flavor of the coffee is full of nutty, smoky and rich chocolate flavor. Although it is a single black coffee, it can feel fresh acidity and good entrance smoothness when drinking it. In the state of ice drink, in addition to having more refreshing acidity, you can also feel a little sweetness. Another part of the Yegashev OCR red cherry project coffee beans has a taste similar to that of Gaoshan tea at the beginning, but it has a little more acidity than Gaoshan tea. After an interview with Hank, I learned that their so-called healthy coffee is to start with the quality control of raw beans, and then go through a strict standard baking procedure, until the final accurate brewing presentation, can adhere to the most perfect principle. The coffee machine can also record in detail the pressure curve during the extraction of espresso, which can be used as a standard to judge the extraction quality of espresso.

Put the ground coffee powder directly into the filter handle, then flatten the protruding coffee powder directly with your fingers, and then flatten the height of the coffee powder and the height of the edge of the filter handle. If there is too much powder, you can push the excess coffee powder directly out of the filter handle.

Use the coffee powder filler to squeeze down the coffee powder that has been evenly distributed in the filter handle to squeeze all the coffee powder more tightly.

After inserting the filter handle into the groove of the brewing head and clamping it tight, you can begin the extraction of espresso.

It can be seen that in the process of extraction, the surface of espresso is gradually covered with coffee oil, which is also the source of subtle sweetness in espresso.

The overall flavor of espresso, like the espresso previously tasted, is mellow and rich. However, when you taste it as a hot drink, you can feel the aroma of orange peel, flowers and cocoa chocolate. (both ice drinks and hot drinks are very delicious.)
