Mocha pot (Moka Pot) is a tool for extracting espresso, which is widely used in Europe and Latin American countries, and is called "Italian trickle filter pot" in the United States.

The mocha pot has a two-layer structure, and when the water in the lower part is boiled, it is sprayed into the upper half of the pot through a mesh filter containing coffee powder. Although hot water can be injected into finely ground coffee powder without air pressure, this is not strictly a concentrated extraction, but rather close to dripping, but the coffee made by the mocha pot still has the concentration and flavor of Italian coffee Espresso.

The mocha pot was invented by Italian Alfonso Bayerlati (Alfanso Bialetti) in 1933. It brews coffee by heating the pedestal. It is a kind of distilled coffee. It is one of the most civilian machines for making espresso, and is widely used in Italian families.

The principle of extracting coffee from mocha pot

The mocha pot extracts coffee by using the vapor pressure produced in the next pot (about 1.5-3.0 atmospheric pressure). When the steam pressure is high enough to permeate the coffee powder, the hot water will be pushed to the pot. The hot water will pass through the coffee powder in the filter on the way to the pot, and the essence of the coffee will be extracted very quickly. The extracted coffee essence, with a strong, sour and bitter taste, is the closest coffee utensil to espresso.

The whole structure of mocha pot is divided into "upper seat", "powder trough" and "lower seat".

Lower seat: a place for holding water.

Powder trough: the position for filling coffee powder.

Upper seat: the place where the coffee liquid is poured out.

What kind of beans is the mocha pot suitable for?

According to the manufacturing principle of mocha pot, it uses high temperature and high pressure produced by steam to extract coffee, while "high temperature and high pressure" is the least suitable for making single coffee, but only suitable for Espresso (Espresso here does not refer to Italian espresso extracted by Italian coffee machine), its correct choice for coffee beans should be Italian mixed beans. Its requirements for baking and grinding are also completely different from those of individual coffee beans.

(5) the brand new mocha pot must not immediately make a pot of coffee to taste, preferably after boiling water twice first.
