An introduction to the producing area of Lake Tawa in Aceh, Sumatra

Lake Tawar, located in the Gayo mountains north of Aceh province in Sumatra, is a crater lake left over from volcanic eruptions hundreds of millions of years ago, with an elevation of 1100m. Because of the inconvenient transportation in the early years, coffee was not planted until the 1930s. Coffee was planted at a height of 1200-1600m, mostly under traditional shade, with the natural blowing of wet and cool clouds in the morning, the falling sun at noon, and frequent showers in the afternoon. the natural microclimate and volcanic soil are quite suitable for the cultivation of coffee beans. The coffee beans produced here are large and green, so they are called emerald manning by Taiwan's coffee gluttons and Lake Tawar Mandheling (Tawar Lake Mantenin) in the world.

On the semi-washing treatment in Indonesia (wet stripping treatment)

Indonesia is geographically located on both sides of the equator and belongs to a tropical rain forest climate, with high temperature, humidity and abundant rainfall. Small coffee farmers are usually located in quite primitive mountains, with precious water resources and insufficient hardware equipment. Local coffee farmers have developed a stage-by-stage drying method in response to such a high humidity environment.

After the coffee farmers pick the beans, they first remove the peel and pulp in the producing area, simply wash and ferment, and then after a very short period of exposure for a day or two, when the moisture content of raw coffee beans is reduced to 30-50%, they are purchased by brokers and transported to the treatment plant at the foot of the mountain. At this time, the pectin is removed to avoid excessive fermentation and acid, and finally the follow-up drying steps are completed.

Indonesia's unique semi-washing treatment is called (Indonesian: Giling Basah) by locals, also known as wet stripping (wet-hulled). Because of its special treatment and drying procedures, the coffee in this area also produces lower acidity and higher mellowness, and produces a unique blue-green raw bean color.
