Smart Cup Clever Coffee Dripper is a coffee filter invented by Taiwan EK INTL Company. There is a controllable switch valve at the bottom of the filter cup, which can freely adjust the soaking time of extraction, so it is easy to use, so it is named "Smart Cup". There are many filter cups with on-off valves on the market that are sold under the name of "Smart Cup" by merchants, but in principle there is the ability to sell Mr.Clever brand to be called "Smart Cup".
The design of the smart cup is inspired by HandyBrew, another EK INTL product used to make tea, and immersion extraction is its biggest highlight. The smart cup can usually be divided into two layers, the outer layer is the frame supporting the filter cup, and the inner layer is the cup body with press switch valve. As long as it is laid flat on the table, the valve will be closed, the coffee liquid will not flow down, and the powder will be soaked. When the immersion is complete, the middle of the chassis is pressed, prompting the piston valve to open and allow the coffee liquid to flow into the container.
Compared with the direct trickling filter cup such as v60, the smart cup has more function of immersion extraction, which is to keep the water and coffee powder in contact with each other in the container. The soaking style is less affected by water injection, and it is easier for beginners to copy the basic flavor of coffee. The flavor substances will change the flavor and concentration of coffee with the water temperature, the ratio of powder to water, the thickness of grinding degree and the time of soaking.
Smart cup filter coffee is the same as brewing coffee with filter cup filter paper. Under the same water temperature, powder-water ratio and extraction time, the grinding degree of the same coffee bean is too coarse, and the coffee flavor is easy to be extracted insufficiently, resulting in insipid flavor and lack of layers. If the grinding is too fine, the coffee flavor is easy to be excessively extracted, that is, after the flavor substances are extracted, the coffee powder is still in contact with hot water and hot water, releasing unpleasant flavors such as wood, resulting in strong coffee flavor but mixed flavor.
In Qianjie, it is recommended that the degree of grinding of shallow roasted coffee beans in smart cup filtration should be medium and fine (the pass rate of standard sieve No. 20 is 75% ~ 80%). The degree of grinding of medium and deep roasted coffee beans is medium and coarse (the standard sieve No. 20 has passed 65% and 70%).
If the water temperature is too high, the coffee flavor will accelerate the release rate, and it is prone to excessive extraction. If the water temperature is too low, the coffee flavor release rate slows down, and it is easy to cause insufficient extraction. In Qianjie, 90 ℃-91 ℃ is recommended for shallow roasted coffee beans and 88 ℃-89 ℃ for medium and deep roasted coffee beans.
Qianjie according to the SCA gold cup extraction standard, using different powder-water ratio and filter cup for brewing experiment, found that the coffee brewing rate of 1:15 is about 17.79% Mel 18.73%. Although the gold cup is only on the edge of reaching the standard, through sensory tests, it is found that the flavor is very suitable for the cooking of most coffee beans.
Next, the front street uses Costa Rican Stonehenge blueberry coffee beans for filtration demonstration. Water temperature: 90 ℃, powder content: 15g, ratio of powder to water: 1:15, degree of grinding: medium and fine grinding (Chinese standard No. 20 sieve pass rate 75%)

After soaking, move the smart cup to the container and open the valve to filter out the coffee liquid in the filter cup. The whole process takes about 15 seconds, and the total extraction time of coffee is 2 minutes 39 percent 05 ".
Due to soaking and extraction, the concentration of coffee can adjust the ratio of powder to water or soak time according to your own preference. The coffee brewed in smart cups has high cleanliness, good alcohol thickness and sweet roundness.
