Simple and easy-to-use CHEMEX brewing technique-misunderstanding of CHEMEX coffee maker

General family coffee brewing methods are divided into: hand brewing, siphon, mocha pot, flannel, coffee maker, except mocha pot has not been used, other ways have also been tried for a while, each has its own strengths, so I will not repeat them here. At this stage, we mainly use hand brewing every day. Recently, we happen to have many friends who have just started to practice hand brewing coffee. As coffee makers who have been making coffee by hand for n years, we also have a lot of relevant (utensils) experience. Cough-- you can almost share your experience in the selection and use of various utensils such as hand-brewing coffee pots and filter cups.

Main utensils for making coffee by hand:

Bean grinder: hand mill or electric?

Which one you want to choose depends on the frequency of drinking coffee. at the beginning, you don't want to spend too much. You can buy a hand grinder first. The advantage of the hand grinder is that it is cheap, lightweight and can be carried anywhere (you can also take it to the company to grind it). The hand bean grinder also has blades made of iron or ceramic. If the iron grinding process produces heat, the heat will make the coffee beans deteriorate, resulting in a worse flavor, and the ceramic knife will not produce heat, but the grinding teeth will be consumed for a long time, and the particles will become thicker and thicker after that, which can be regarded as consumables and should be changed for a long time, but no matter which kind of grinding claims that the particles are uniform. It is not as uniform as the electric bean grinder. And the amount of grinding a cup by hand is good. I have to grind two cups once a day, and it is very tiring to grind it once in the morning and afternoon. I bought a ceramic bean grinder at the beginning. After using it for about a month, the part of the ceramic mill became more and more flat. the grinding particles are very uneven, and each time the hands are so tired that they can't get the taste they like, so I just give up and start looking for an electric bean mill.

The electric bean grinder is more expensive, and the Pegasus in Taiwan is cheap. everyone claimed that the bean grinder with high CP value was very particular about quality at that time, and was operating a special hand coffee shop. She recommended that if the budget was enough, it would be better to buy a Japanese Fuji bean grinder directly. When grinding beans, the heat caused by friction and the uniformity of coffee powder particles grinded are better than Pegasus. These are also important factors that will affect the flavor of the coffee, so in the end, the Fuji bean grinder imported directly from Japan has been in service for nearly ten years, without any problem, even if the price is slightly higher, it is still a good deal. In addition, the original coffee powder box of Fuji coffee grinder was very large, which was really not easy to use. later, we found glass cans of just the right size for export to replace it, so as to reduce the problem of coffee powder flying away.

Hand coffee maker: a fine-mouthed pot is recommended. Kalita Pot 900 is currently used every day (first from left above)

At the beginning of the practice, of course, the visual department likes to look beautiful. The Moon Rabbit enamel pot (second from the right above) is the first hand-flushing pot. The enamel does not rust, does not require special maintenance, and is colorful and beautiful. It looks like it is cool, but after several times of flushing, I found the problem. The spout of this hand-flushed pot is too thick, the outlet is too fast, and it is not easy to control the amount of water. For beginners, it is really not a good pot, and sometimes good-looking and easy to use are two different things.

Because I couldn't stand the uncontrollable amount of water, I soon started to use the fine-mouthed copper pot Kalita Pot 900. sure enough, there was a difference in professional use, and of course, some people said that more practice was needed (which one doesn't need to be practiced? ), but the outlet is small, so you can use the rotation speed of the hand to control the amount of water. if the novice asks which one is better, he will recommend this one, which is currently used every day. Even go to the coffee shop outside, take a glance at the pot used by the bar player, you can probably guess whether the brewed coffee is to your taste.

So what are the other coffee pots for? The black kettle (the third from the left above) was bought when I was traveling to Japan before, because of its foggy texture, how it looks, I saw it visually, and I thought it would be very short if I didn't hold one home. Later, when I moved to Japan, I always wanted to find the small shop that sold the pot, but I couldn't find it. Later, I found that it had become a very famous coffee shop, a kind and popular coffee shop named "Kamakura / Kumakura", which is very famous. "caf é vivement dimanche". As for whether this pot is easy to use? Compared with the copper pot, the copper pot is easier to operate.

The last stainless steel kettle (the first from the right above) was bought purely because it can boil water directly with a gas stove, without having to use other kettles to boil water. It is very convenient to brew coffee directly after boiling water, but facts have proved that it is more convenient to use a general kettle (second from the left) with a copper kettle.

If you already have a coffee pot on your hand and feel that its outlet is too large, you can refer to the coffee pot (kettle) outlet regulator made by IFNi, a professional coffee roasting shop in Japan. If you want to use a rougher coffee pot with finer water, you can consider buying it, but the unit price is not low, and it is not clear whether it is easy to operate or not. Here is pure information sharing.

Hand coffee filter cup: CHEMEX (pot for six people) + KONE metal strainer

No matter which kind of filter cup, filter paper or metal filter mesh, or flannel filter cloth match, the use of coffee filter paper brewed coffee, a bit like a beautiful woman, because the oil in the coffee has been filtered by the filter paper, the taste is fresh. Flannel filter cloth can retain more coffee flavor, but every time after use to wash clean, soak water in the refrigerator, it is not very convenient, metal filter is a combination of the above two advantages, retain more oil, brewed coffee, but also thicker and richer than filter paper. However, the metal filter, the most important is those dense holes, a good metal filter can let the coffee dripping time and speed, the perfect match between the two is very important. My friend once used a different brand of metal strain. according to him, the coffee dripped too slowly for a long time, and the coffee was soaked in hot water for too long, and the coffee was very bitter. I have also bought KINTO's metal filter cup combination, but the coffee drips too fast, the hot water does not stay long enough, and before the coffee flavor dissolves, the water has already flowed away, and the end result is that the coffee is insipid and tasteless.

CHEMEX (six-person pot) + KONE metal filter is just the right speed to brew your favorite coffee flavor, which is currently used every day. It should be noted that the KONE metal strainer can only be used in CHEMEX (six-person pot) or Hario v60. The coffee filter pot for six people in CHEMEX is a little larger, so it is a little difficult for girls to hold it, and it is just right for boys. CHEMEX also has a small pot for three people, which is more suitable for girls' hands, but in order to use a metal filter, she chose a pot for six people. Even if the pot is a little big, it is OK to make coffee for two people on weekdays.

Choice of coffee beans:

Shallow roasted coffee beans or deep roasted coffee beans

The shallow roasted flavor retains more floral aroma. At present, the coffee beans in Kenya or Ethiopia are more suitable for shallow roasting, while the deep roasted coffee beans are more cocoa flavor. Each company has different roasting methods, but they all indicate that they are shallow roasted or deep roasted coffee beans. When buying, try to ask clearly, but although it is the same shallow roasting, the taste will not be the same. The coffee beans selected by the seller and the purchased manor are not the same. The flavor of coffee beans is not the same when the climate is different from year to year. In my impression, the best drink is "kabuki beans", which are ultra-high unit-priced coffee beans bought by friends. After about 20 days of roasting, they are washed by hand, and the rhymes that flow into the throat are memorable. I have been looking for the same taste ever since. Even if they are all "kabuki beans", we can no longer find the coffee beans that make us think over and over again. Therefore, to make a coffee with a good flavor is related to many factors, such as the selection of beans, the skill of baking, the time of placing after baking and the skill of hand brewing. You might as well try in many ways and then choose. The only thing to pay attention to is to choose "fresh coffee beans" as much as possible.

"85C coffee", coffee beans that can be brewed at 85C, must be the freshest freshly roasted coffee beans within three days. Coffee in chain coffee shops is usually centrally baked. If it is claimed that the original coffee is imported and floated across the sea, the coffee beans that have already been roasted will be placed in the store after a long period of transportation, and then be bought and brewed home by consumers. How much time has passed? the freshness of coffee beans like that is open to question. It is recommended to buy coffee beans in your own roasting shop and roast them in the store, which is also relatively fresh, and through the process of chatting with the boss when buying, you can learn about the characteristics of this batch of coffee and the time it has already been roasted, and adjust it slightly when you go home to brew it. It's also more able to flush out the flavor you like.

Some people say that drinking coffee will cause palpitations, which is related to personal physique, but if you choose fresh coffee beans, you can greatly reduce the condition of palpitations. If you have heart palpitations after drinking some coffee, you might as well find a trusted own roasting coffee shop and drink coffee that has just been baked with fresh coffee beans to see if there will be palpitations.

Preservation of coffee beans:

Coffee beans bought home should be placed in low-temperature and opaque containers as far as possible. if the coffee bags are packed with breathable valves, the best way to preserve them is to use the original bags directly, because the bags contain one-way breathable valves specially made for coffee beans. If not, you can also transfer it to the secondary option, opaque sealed cans, if there are sealed cans that can press the air out of the cans, the chances of oxidation deterioration of coffee beans will be greatly reduced. At present, the copper cans of Kyoto Kaihua Hall contain a pressed flat cover, which can squeeze out the excess air in the cans. The super-airtight copper cans made by professionals are very suitable for holding coffee beans. Taiwan acting Tainan Sen / CASA.

The skill of hand-brewing coffee, as everyone has different preferences, is also related to the baking degree of beans, so it is difficult to quantify the explanation. Professional coffee bars have a professional process, using electronic scales with fast reaction speed to measure the weight of coffee dripping. Match it with time, and you can make coffee that tastes good. The quantifiable part of our unprofessional hand-made coffee is briefly introduced as follows:

Use coffee bean proportion

The amount of coffee beans used: make one cup of coffee (180ml-200ml): 20g, make two cups of coffee (360ml-400ml): 30g, why not equal proportion, because the coffee machine itself in the grinding process, the internal will absorb some powder, need to retain part of the consumed coffee powder, so not equal proportion.

Coffee powder thickness scale:

Each coffee brewing method has a corresponding thickness. If hand-brewed coffee uses a Fuji bean grinder, it is more appropriate to use scales of 3.5, 4 and 4.5. The current purchase of coffee beans, using 4.5 grinding particles, closer to our favorite taste. If the coffee beans you buy can't get the concentration you want, try choosing different particle sizes.

Water temperature of hand-brewed coffee:

The hand temperature is related to the freshness of coffee beans. The more fresh it is, the lower the temperature. 83-85 degrees is suitable for super fresh coffee beans within three days of roasting. Generally, coffee beans bought by "self-roasting coffee shop" are about 10 days. When buying, remember to ask the store a little bit, the family often drink shallow roasted coffee beans, experience, shallow roasted coffee beans, the best flavor is about 15 days after baking. The use of hot water at 90-91 degrees is usually not too bad.

Steaming time:

The amount of powder in a cup of coffee is about 20-25 seconds, and that of two cups of coffee is about 30-40 seconds. Let the coffee fully absorb hot water and then continue to flush, so that the aroma and caffeine in the coffee can be flushed out. If follow-up brewing, feel that the speed of the water falling into the coffee pot is too fast, it should be that the steaming time is not enough or the steaming is uneven, next time, lengthen the steaming time a little longer, and try to make all the coffee powder fully absorb moisture when steaming.

Brewing technique:

It is difficult to put it in a nutshell, to put it simply, first the inner ring and then the outer ring, try not to rush to the edge, the water at most rushes to the edge to the inside 5mm, and keep the appropriate coffee powder on the edge in order to let the coffee ooze slowly. Water cut-off is also a very important step, proper water cut-off, so that coffee can have more time to absorb hot water and release the taste of coffee. How to cut off the water, the number of times is variable, we need to keep trying. No matter how to make it, let the coffee absorb enough water, and then flush out the flavor well at the right time, it takes constant practice, this part can search the network to have a lot of master teaching.

Although Chemex six-person pot is used, it is usually made for two people, and when occasional guests come, they have to make more cups, because they do not often practice the method of brewing large portions, and they are still used to brewing two-person portions step by step, and the coffee brewed out is not stale.
