EL Salvator Los Pirineos Salvador Pyrenees (Pirineos), run by Gilberto Baraona, is located at the top of the Tepeca volcano in the Usulatan district, surrounded by Berlin, Santiago Maria, and Joey. The crop began in 1890 and, according to the family, the most primitive seeds came from Antigua, Guatemala.
The coffee beans here are divided into small to medium size according to different batches and varieties. At present, the main varieties are Pacas, Bourbon and Pacamara, as well as the Procafe program, which is to experiment with native, mutant and mixed coffee trees from all over the world.
Pyrenees (Pirineos) is one of the pioneers of building its own micro-processing plant in El Salvador, and the producers are still trying the drying method in the post-production system, while the soaking method in this experiment is to remove the pulp and mucous membrane and then soak, which is a delicate treatment that retains elegant vanilla, slight cranberry acid, and mellow nut sweetness in the aroma.

The pressure grinding degree of Philharmonic is recommended to be 3.5, and the water temperature is 90 ℃.
