Antichio La Claudina, Colombia

This batch was produced by a young coffee farmer in Colombia.

Luis Saldarriaga, a famous coffee farmer in Antioch, owns two estates, El Encanto and La Claudina, both of which are in Antioquia, each with 60 hectares, but add up to only 42 hectares for growing coffee. The rest are virgin forests and nature reserves, between 1400 and 1800 meters above sea level, but in different areas. Claudia Manor, located in Ciudad Bolivar, is the place where this coffee is produced.

Louis's son, Juan, recently took over the two estates, not only experimenting with different treatments and varieties on his own estate, but also helping young coffee farmers nearby. The microbatch consists of 50% of Castiu and 50% of Colombian bean seeds, and he has experimented with different varieties at different elevations, many of which have only recently been planted.

Antioch's coffee is famous for its firmness, but it may be a little boring. Juan's experiment led us to get to know more interesting coffee. The biggest challenge of making sun-dried beans locally is that the climate is humid and the temperature is sometimes too high, which is extremely disadvantageous to drying. Ruan quickly built shade and drying facilities and elevated shed beds. He also bought machines that dry with cold air and software that can control temperature and wind speed to produce coffee with different flavors.

Qianjie coffee brewing suggestion: hand-made Hario V60, Chemex. The water temperature is 90-92.

Other cooking suggestions: Philharmonic pressure (Aeropress), law pressure. Water temperature 89: 91

Recommended water quality: mineral water with low mineral content (TDS < 200mg / L = 150mg / L)
