Coffee filter cup is an appliance for extracting and filtering coffee. Its main function is to hold filter paper, so that filter paper can effectively separate coffee grounds and coffee liquid, which is equivalent to a "stent". Different filter cups have their own characteristics. Because the coffee powder distribution of different shapes is different, the water speed and the contact time between the powder and the water are different. What is the difference between using different filter cups to brew the same beans? This time we used hollowed-out filter cups and V60 for comparative experiments.

01| Filter bowl introduction

V60 filter cup has faster flow rate, which makes the exhaust effect of the filter cup more smooth, improves the extraction rate, and the curved ribs increase the water flow path, which can maximize the contact area between coffee grounds and air and water, thus avoiding the occurrence of water flow.

The skeleton of the hollowed-out filter cup is distributed in a net-like manner, the filter paper and the air are fully released, the extraction is not easy to block, the water flow is smooth, and the water will flow down from the surroundings when brewing coffee, so the brewed coffee will be lighter. A coffee that tastes well balanced.

Both filter cups use the same brewing technique, the same time and amount of steam, and use the same amount of water to complete the brewing. Try to be as consistent as possible.

02| brewing experiment

Take the red cherry of Yega Shefi as an example

V60 Manual punching parameters

Powder water ratio: 1:15

Abrasion: BG4Z (medium fine grinding)

Water temperature: 90℃

Brewing method:

Steam 30g of water for 30s

Inject 110g moisture stage

Water injection ends at 225g

Water injection ends at 1′41″, and when water is filtered out, it is 1′56″.

Flavor: Tropical fruits, spices, fermented wine bouquet, outstanding aroma.

Palate: rich layers, high body.

Hollow filter cup hand flushing data

Powder water ratio: 1:15

Abrasion: BG4Z

Water temperature: 90℃

Brewing method:

Steam 33g of water for 30s

Inject 110g moisture stage

Water injection to 226g ends

1′40″ water injection ends, 2′07″ water filtration ends

Flavor: Berries, fermented bouquet.

Palate: The taste is balanced and clean, but slightly thin.

03| conclusion

V60 has outstanding flavor layers, clear and transparent taste, and high body. The filter cup has a high degree of fit with the filter paper, but the flow rate is faster than that of the hollow filter cup, because the design of the spiral rib prolongs the extraction time of the coffee liquid and the coffee powder, and the design of the convex groove generates a torque, thereby accelerating the extraction speed of the coffee powder.

The hollowed-out filter cup and filter paper fit poorly, and the filter paper is easy to fall in the process of brewing. The water flow path of the hollow filter cup will be shorter than that of V60, and the flow rate will be faster when the water volume is large, and the flow rate will slowly decrease when it flows to the back, the coffee liquid will flow out from all directions of the filter cup, and the extraction time of water and coffee powder will also be shortened, which is easier to cause insufficient extraction.
