What comes to mind first when you think of Guatemalan coffee Antigua? This is the name of the ancient capital, the flower god? The Antigua Valley of Guatemala is surrounded by three volcanoes, Agua,Fuego,and Acatenango. The estate is planted with bourbon, tibeka and kadura varieties of coffee, which grow under the shade of Gravilea trees, allowing the plants to receive appropriate sunlight.
The Zelaya family, the owners of the estate, has been known for producing high-quality Guatemalan coffee for four centuries, Bella Carmona being their brand, which has received many awards since it won the first prize at the Guatemalan National Exposition in 1935. The Zelaya family is committed to maintaining excellent coffee quality. Quality control begins with the selection of cultivated varieties and continuous rigorous supervision during the processing of green beans to ensure that only the best products are exported. The Zelaya family is very concerned about ecological sustainability and coffee production is carried out in an environmentally friendly ecosystem.
Not only does all coffee have shade, but special emphasis is also placed on developing environmentally friendly washing plants; waste water used in the washing process is led to settling tanks, where the waste from the treatment process is decomposed and used as fertilizer. The ripe red coffee cherries are picked and transported to a washing station or treatment plant. Coffee fruits are peeled, fermented in a washing tank, cleaned and then sent to a trellis bed to dry in sunlight. When the moisture content of the shelled green beans is reduced to the appropriate ratio, they are carefully bagged and sent to the warehouse for further aging until the optimal balance of flavor is reached, and then shelled and ready for export.
The dehulling plant is located inside the estate to monitor the whole process and ensure the best quality.
Floral is produced by Las Pastores, a well-known local processing plant in Guatemala. The quality is strictly monitored by the famous La Minita Laminita Group. These meticulous and complicated procedures are all to ensure that the coffee provided by Pastores is of the highest quality.
Antigua is the most famous of Guatemala's eight major producing areas. The unique volcanic soil shade cultivation gives Antigua's coffee beans a unique and delicate smoky flavor.
