Honduras is a coffee-producing country, ranking first in global coffee production, with an absolute high altitude, mainly growing Arabica varieties. Hot Honduran sherry coffee was sold on the street before 2019, which shows that Honduran coffee people have their own innovative ideas. So today we share the story of Twin Flower Manor, a manor with a beautiful name from Honduras.

Production area introduction
Honduras is located in the north of Central America, bordering the Caribbean Sea to the north, the Gulf of Fonseca in the Pacific Ocean to the south, Nicaragua and El Salvador to the east, and Guatemala to the west, mostly mountains and plateaus. It has a tropical climate, mild temperature and abundant rainfall, so it is an ideal place for coffee growth.
Honduras produces two kinds of coffee of very good quality, which are highly respected by coffee lovers. One is "Highland Coffee", which grows at an altitude of 1000 to 1500 meters, and the other is "selected Highland Coffee", which represents the highest level of Honduras, which grows at an altitude of 1500 to 2000 meters.
Coffee bean granules are large in shape, uniform in size, uniform in color and glossy. In order to facilitate harvesting, farmers will prune the coffee trees to no more than 150 centimeters, because if they grow too high, they have to set up ladders to pick, which is not only time-consuming, but also may damage the trees by bending branches. The average height of high-quality products is more than 1100 meters above sea level. 69% of the coffee grown in these areas is HG, and 12% is SHG,19% and CS.

The name of the manor is Twin Flower (Las Gemelas), which was created by Neri to commemorate the birth of twin daughters.
For a long time, the Neri family has been growing Huang Kaduai, and this year Neri adjusted the planting pattern. She transplanted the original Huang Kaduai and planted a batch of red Kaduai here.
At the same time, break the family tradition of washing treatment, innovative attempt to use the sun treatment, and use it to participate in the competition. The two experimental batches were fermented for 72 hours before drying and then dried for 90 hours before drying. This award-winning coffee bean is a 72-hour batch of fermented beans.

Variety (Red Kaduai)
Caturra, a natural variety of Arabica variety bourbon, was found in Brazil in 1937. Compared with other coffee, its fruit is stronger, harder to pick, has high disease resistance and is suitable for growing at high altitude with delicate and clean acid.
Red kaduai has medium acidity, smooth taste, good mellow thickness and sweetness, and its softness allows it to blend with most coffee beans without much taste change.

Sun treatment

Sun treatment is the oldest and most primitive treatment of coffee beans, in which the harvested coffee cherries are placed on the terrace, and some are even directly exposed to the sun by the side of the road (about 27-30 days). The moisture content from 60% to only 12% is completed, the beans treated by the sun have the lowest acidity, obvious sweetness, high alcohol thickness but slightly lower cleanliness.

Raw bean analysis
This bean is light green, with more silver skins on the surface of raw beans and round, short and uniform granules. It smells like sour grass and pears.

Curve analysis
When the front street baker saw the bean, he saw that the elevation of the bean was not very high, and it was the treatment of the sun, so he decided to use a lower temperature to enter the bean, and then use the medium heat to slowly reduce the fire to bake the bean.

Enter the pot immediately when the furnace temperature reaches 175℃, the firepower is 130C, the throttle opens 3, the temperature return point is 1mm / 39th / 360.When the furnace temperature is 140℃, the throttle opens to 3.5and the firepower remains unchanged; when the furnace temperature is 151.1 ℃, the bean watch turns yellow, the smell of grass disappears completely, and enters the dehydration stage; when the furnace temperature reaches 176℃, the firepower is adjusted to 100and the throttle remains unchanged.
The smell of toasted bread will obviously change to the smell of coffee, which can be defined as a prelude to an explosion. At this time, it is necessary to listen carefully to the sound of the explosion point. When the explosion starts, the throttle will be adjusted to 4. After the explosion, it will be developed as 40 ℃.
