We all know that "cleaning in time" is a good habit for baristas-whether it's going out for a competition, a roadshow, or an event at a coffee club, cleaning the bar after making coffee can reflect the professionalism of a barista or coffee practitioner. The same goes for the maintenance of the coffee machine.

Remember to clean the steam outlet after milking. To be exact, remember to clean the milk before and after it is disposed of. This will prevent milk from sticking to the steam outlet and blocking the release of steam, as well as preventing the growth of bacteria.

Rinse the head before each extraction of espresso to prevent residual coffee grounds from affecting the taste of the coffee.

Keep the cleaning cloth clean and change it two or three times a day to make sure they are washed in high temperature and detergent.

Get into the habit of cleaning the coffee maker correctly at the end of the day. Routines should include the following actions:

Wash the boiled head

(1) remove the filter from the coffee handle and replace it with a non-porous filter cup with anti-cleaning (or cut a piece of film just enough to block the filter)

(2) put 5 grams of special cleaning powder, put the handle back on the coffee machine, turn on the switch for 10 seconds and stop, soak for 5 seconds and repeat 3 times.

(3) remove the handle, pour out the waste water inside, and then clean it.

(4) reinstall the handle, turn on the switch, tighten and loosen several times until the effluent becomes clean.

(5) remove the handle and use a flushing brush to hedge the boiled head for final cleaning.

Extract a few cups of concentrate before the official production the next day to eliminate any possible detergent flavor in the coffee.

Annual maintenance

Once a year, you should replace these small parts before they become a big problem:

Steam and hot water valves or rings

Shoulder bolt gasket

Expansion valve (this will prevent boiler leakage and temperature loss)

Anti-suction valve

Coffee machine bearing

Waste water pipe

Powder bowl (this may not be necessary, but it takes time to check every year)

Replacing all these items may seem like a lot of expense. But when you have to repair it, it feels cheap.
