Nefas Farm

All these coffees are grown 100% in the shade because the farm is covered with dense forest and the soil is mainly loam. Nefas Farm is located in the West Dama area, about 514km from Addis Ababa, the capital of Ethiopia. The farm has been producing coffee since the beginning of 2000, planting 200 hectares of coffee trees.

In the water washing station, the washed coffee is ground into pulp with a refiner, and the refiner does not use a degumming agent. Coffee beans are fermented in a fermentor for about 35-48 hours, depending on the climate at that time. There are three lagoons for wastewater treatment. The coffee is then dried on an elevated bed for 9 to 15 days. In order to produce natural coffee, ripe red cherries are picked and placed directly on a dry bed. Because natural coffee is prone to mildew, these coffees turn on the bed more regularly than wet-processed coffee. Fortunately, the location is very open and breezy, which helps to evenly dry cherries. The aroma of cherry is very rich, reminiscent of raisins.
