Front Street-introduction to Manning Coffee
Mandarin Coffee, also known as Sumatra Coffee, comes from the Indonesian island of Sumatra. Its flavor is very rich, fragrant, bitter, mellow, with a low sour taste, is one of the largest demand for coffee in the world.
In fact, Mantenin is not the name of the producing area, the place name, the port name, nor the name of the coffee breed. It is the transliteration of the mandheling people in Mandaining, Indonesia. During the Japanese occupation of Sumatra during World War II, a Japanese soldier asked the owner in a cafe what kind of coffee he was drinking. Where did the boss mistakenly think he was asking? Answer: Mandaining. As a result, there is the well-known "Manning coffee".
The history of coffee in Indonesia dates back to 1699, when the Dutch first planted Arabica saplings on the island of Java. In 1908, rust broke out and coffee trees on the island of Java were destroyed and had to be changed to robusta coffee trees with strong disease resistance. Indonesia is now a large coffee producer, and Robusta accounts for 90% of the total coffee production. but first-class Arabica has been planted in some areas, and Mantenin in Sumatra is the representative of Arabica.
These coffee trees are planted on the hillsides of the plateau between 750m and 1500 meters above sea level. mysterious and unique Sumatra gives Mantenin coffee, rich aroma, rich taste and strong flavor.
Mantenin coffee beans have large particles and hard beans, which are prone to defects in the process of planting. After harvest, they are usually strictly selected by hand. If the control process is not strict enough, it is easy to cause a mixture of good and bad quality. Mantenin has a strong taste, with a strong mellow and rich and lively sense of movement, neither astringent nor sour, mellow and bitter can be fully revealed. Mantenin beans are very ugly, and coffee fans say that the worse the Sumatran coffee beans are, the better, mellow and slippery they are.
Indonesia's rainy season and coffee fruit ripening season overlap, so it is difficult to dry coffee beans in the sun, thus developing a "Sumatran-style" treatment with regional characteristics. It is this way of production and processing that creates the unique flavor of Manning coffee.
Sumatran treatment: generally speaking, the pulp of coffee fruit should be removed before it is fully dried and then shelled. Indonesia has a short drying time, so it will peel off when it is semi-dry, and then the buyer who buys the raw bean will dry it by himself.
Manning contains a kind of masculinity, drinking with a feeling of dripping, wanton and gallop, which fascinates men and symbolizes a great spirit of tenacity and boldness.
Knowledge: good quality coffee fruit generally has a good shading effect, shade can block the hot sun at noon, reduce the metabolic rate of coffee, and contribute to the development of nutrients, fruit acids and aromatic substances.
