Make sure coffee is recently roasted and shipped in valve-sealed bags. Grinding should be done immediately before brewing. Don't forget to preheat the demitasse and portafilter. All of these details are important for making quality espresso.
One thing to watch out for is the acidity of the coffee-low-acid coffee produces a fairly bland taste, while high-acid espresso beans glow better.
