Did you use your water correctly?

On the one hand, the water temperature will affect the extraction of coffee. The water temperature is too high, it is easy to wash out the bitter and astringent taste; the water temperature is too low, the coffee taste is light, and the acidity is out of balance.

But the normal range of cooking water temperature is 85-95 ℃. Generally, it depends on the degree of baking and freshness of beans to determine the temperature of cooking water. Also pay attention to the proportion of hand-made coffee.

My personal suggestion is to divide the beans into five grades: very deep-medium-deep-medium-shallow-shallow, corresponding to 85-87-90-92-95 ℃ respectively; when the exhaust is exuberant, the steaming time is prolonged, and if the exhaust is not exuberant, the water temperature is reduced by 1-2 ℃.

On the other hand, the amount of minerals in the water will affect the taste and aroma of coffee, as well as the smoothness of the taste.

Whether the specific water is suitable or not, we need to analyze the specific situation. Anyway, the consensus in the industry is that the water quality of coffee brewing needs to be moderate, not too soft (TDS is too low) or too hard (TDS is too high).

But because you never know when you will drink a cup of coffee that smells of burning, fuel consumption and corruption, it is bound to be a nightmare for coffee lovers.

More importantly, if coffee machines, bean grinders and other complex utensils with water and oil are not clean for a long time, it is easy to corrupt and breed bacteria and endanger human health. At that time, no matter what high-quality coffee beans you use, you will inevitably have a bad stomach when you drink them.

Generally speaking, we don't need to think too much about how to store coffee beans, because they are usually in coffee bags or coffee cans, and there is no need to deliberately change the storage container. We just need to put it in the cupboard or in the corner.

But in some places it is best not to store them for a long time: wet kitchens, ovens, microwave ovens and other heating appliances, windows in direct sunlight, oxygen, moisture, high temperature and sunlight will accelerate the oxidation and deterioration of coffee beans.
