My personal suggestion is to divide the beans into five grades: very deep-medium-deep-medium-shallow-shallow, corresponding to 85-87-90-92-95 ℃ respectively; when the exhaust is exuberant, the steaming time is prolonged, and if the exhaust is not exuberant, the water temperature is reduced by 1-2 ℃.
On the other hand, the amount of minerals in the water will affect the taste and aroma of coffee, as well as the smoothness of the taste.
Whether the specific water is suitable or not, we need to analyze the specific situation. Anyway, the consensus in the industry is that the water quality of coffee brewing needs to be moderate, not too soft (TDS is too low) or too hard (TDS is too high).
