About the production method: siphon is probably divided into two genres, one is to pour coffee powder into the upper pot before the water from the lower pot enters the upper pot (there is a saying: 'siphon is like going uphill, hand rush is like going downhill,' that is to say, the water temperature is constantly heating up to extract coffee, while hand brewing is extracting coffee under continuous cooling). The other is to wait for the water in the next pot to completely enter the upper pot and then pour in the coffee powder after the water is stable, and then extract it. Operation steps:
1. Install the siphon pot: no matter how the siphon pot looks, the shape is similar, which is divided into five parts: the upper pot, the lower pot, the base, the lid and the filter. (choice of filter: the common filter is generally a filter cloth filter, but the filter cloth is easy to absorb oil and is not easy to clean, and the next time it is used, it is easy to produce foul smell, while the filter paper and filter filter are much easier to clean. But the filter paper needs to be handled carefully, do not pierce the filter paper, and the coffee made by the filter screen usually produces a little impurities, so the choice of the filter depends on your choice. 5. Start heating: heat the water in the pot with a halogen lamp and turn the firepower to the maximum (make sure there is no water on the outer wall of the pot before heating, so as to prevent the pot from exploding during heating)

6. Adjust the firepower: lower the firepower, stabilize the bubbles, and prepare to pour the coffee powder into the pot to extract.
7. Start extraction: pour the coffee powder into the pot, gently pat the coffee powder with a stirring stick to make it completely immersed in water, and then start stirring (stir clockwise or counterclockwise, but remember to stir in one direction, not back and forth). From the beginning to the end of the extraction for about 1 minute, some players like to count the time for extraction, which is a good habit, but aesthetics doesn't like timing very much. Usually I stir twice. About 20: 30 each time, so the extraction time is controlled in about one minute, and the coffee beans of good quality are resistant to boiling, while the coffee beans of poor quality are not resistant to cooking, and the time is not fixed. Players will adjust it later by virtue of experience, and I will not elaborate on it here.

8. Finish the extraction: it takes about one minute, remove the fire, and quickly wrap the next pot with a cold wet towel prepared in advance (this step is very important, the temperature of the next pot is still very high when the fire is removed, while the temperature of the coffee liquid in the upper pot is low. The coffee liquid flowing down from the upper pot will be damaged by the high temperature of the lower pot), the glass of a good siphon pot can withstand such a conflict of high temperature and low temperature. As long as you buy the authentic product, you don't have to worry that the next pot will burst.

When we wrap the next pot with a wet rag, we stir the coffee in the pot with a stirring stick at the same time.
