Slyer pressure swing extraction Super espresso Machine (SLAYER ESPRESSO MACHINE) is a new espresso machine launched by a company of the same name in Seattle in early 2008. Different from the previous concept of espresso machine, it breaks the theory of constant pressure extraction, imitates the pressure curve of pull rod machine, and adds a manual regulating valve on the brewing head of traditional espresso machine. Therefore, in the process of extracting espresso, the pressure provided by the water pump can be manually adjusted between 0 bar and 12 bar by the operator according to his own idea, so as to control the pressure and flow rate of espresso. The cream-like coffee extract is obtained. The oil crema of the extracted espresso is very rich and the taste is unique.

Because it provides more creative space for baristas, and its appearance is extremely exquisite and elegant, it has been sought after by the media and baristas as soon as it is published. It is called the Ferrari of coffee machines. At present, there are only 20 machines in use in the United States. In the American Fine Coffee Association SCAA Annual meeting and Exhibition in April 2009-10, the booth of the Slyer coffee machine was crowded and the whole booth was packed, which shows people's great interest in this new model. However, limited to the humble, the author has not seen this model in China. It is not confirmed that there is an American coffee company in Shanghai, China.

The author calls it a super espresso machine, partly because it is a pressure swing extractor that surpasses constant pressure extraction, and because it is also super expensive. Slyer's super espresso machine currently sells for as much as $18000 in the United States.
