Step 1: extract espresso

There are several key numbers in making Espresso: "9 atmospheres, 90 ℃, 30 seconds". It means that a small but high concentration of Espresso can be extracted in just 30 seconds at a high temperature of 90 ℃ and a high pressure of 9 atmospheres.

Step 2: prepare the milk foam

Milk foam is the product of a fine mixture of milk and air. The way to make milk foam is to pump air into the milk.

First of all, pour the milk into the milk tank, the amount should not exceed the milk tank 1max 2, otherwise the milk will overflow due to expansion when making milk foam. Then heat the milk to about 55 degrees, remember not to exceed 70 degrees, in case the protein structure in the milk is destroyed. Extend the steam stick to the bottom of the tank at a 45-degree angle, turn on the steam and move the tank down slowly to avoid excessive stirring of milk to prevent excessive bubbles. Turn off the steam, remove the steam stick and clean it with a wet cloth.

Do not use skim milk to make foam, because the fat content in skim milk is too low, so the taste of the foam will be much worse than that of full fat.

Pouring directly into the shaping method is the most difficult way in the coffee flower drawing technique. Use foamed milk and quickly pour it into the Espresso before the milk is separated from the foam. After the milk foam and Espresso are fused to a certain saturated state, the hand shaking technique is used to make the milk bubble float on the surface of the Espresso by using the principle of water grain fluctuation, and the wrist shaking is used to control the basic figure of the fox.

Step 4: carve the details of the expression

After using the direct pouring method to make the figure of the little fox, it needs to further carve its facial details and expression. Choose a needle as a paintbrush, drag espresso onto the foam and depict the fox's eyes and mouth in detail. Use the top arc of the spoon to gently pull out the outline of the fox's ear.

Note that after each dip in the coffee, clean the top of the engraved needle, otherwise it is easy to stain the surface of the coffee.
