Production method and process of coffee beans
coffee beans
If you want to brew a cup of mellow coffee yourself, in addition to brewing skills, the most important thing is to buy good quality coffee beans. In the purchase should also pay attention to whether the color and particle size of beans uniform, good coffee beans not only shiny appearance, and with a strong aroma without mixed odor.
Degree of grinding
Depending on the coffee machine used, grinding can be divided into three stages: coarse grinding, medium grinding, and fine grinding.
Coarse ground coffee is suitable for filter coffee pot (traditional brewer in the United States), medium ground coffee is suitable for follicular, flannel filter, siphon coffee pot brewing mode, fine ground coffee is most suitable for coffee distiller (also known as drip coffee maker). And remind you that the shorter the brewing time, the finer the ground particles should be. Because the smaller the particles, the larger the area in contact with hot water, the brewing time should be shorter. And too fine a grind makes coffee bitter and easier to clog the coffee machine; too coarse a grind makes coffee less flavorful.
Fresh, warm water.
97% of coffee is water, and only with good water quality can coffee be brewed with its original aroma and richness. It is best to use filtered water to brew coffee. Do not boil coffee, because boiling water will make coffee bitter, but also note that the temperature of the water should be slightly lower than 96 degrees Celsius.
Coffee should not be reheated. When brewing, care should be taken to cook only the required amount at a time, and it is best to drink it when it is just cooked. The best drinking temperature for coffee is 85 degrees Celsius.
How to make coffee beans
First prepare the necessary equipment: hand-cranked small coffee mill, coffee filter paper, coffee funnel, cup, so that you can make a simple and convenient hand-brewed coffee.
1. Grinding beans
First grind the coffee beans with a grinder (the finest grind).
If you have a grinder at home or a soymilk machine with crushing function, you can also use it, but the effect is not ideal, and the particles are relatively coarse. If none of these tools are available, it can be done with a rolling pin and a panel. Compaction and crushing method, in short, to make the particles as small as possible.
2. Coffee
If the coffee is ground fine enough, use the brewing method. Put a piece of filter paper inside the funnel, put a cup of coffee powder (8-10) into the filter paper pocket, to avoid coffee powder leakage, first wet the coffee powder with warm water, the cup is also warmed with boiling water in advance, and then stand under the funnel. Add the right amount of coffee powder according to your taste.
3. Brewing
With about 96 degrees of pure water (must be pure water, otherwise affect the taste of coffee), evenly pour a small amount of clockwise on the coffee powder, fully submerge the coffee powder, wait a little, after the first water filter into the cup, continue to pour a small amount of clockwise evenly, watch the coffee liquid in the cup reach the desired amount, you can close the cup, close the cup with counterclockwise pouring method. (The amount of water added depends on the amount of coffee powder and personal taste.)
4, cooked.
If the ground particles are still large, then you need to cook them. Heat it in a casserole or stainless steel pan with an appropriate amount of cold water. Control the heat well. Cook for 2 minutes until the oil foam overflows. Reduce the heat and cook for another half a minute. Stop fire and settle for half a minute. Pour it out. Filter it with filter paper when pouring out.
5. Seasoning
You can add the right amount of sugar and milk according to personal taste, or drink it directly.
This method is simple and does not affect the taste of coffee, but be sure to pay attention to the temperature of the brewing water and the temperature of the coffee liquid, otherwise it will affect the taste. The coffee beans here are best selected from newly roasted beans and freshly ground at the same time, so as to ensure the aroma and taste of coffee.

How to control the roasting degree of coffee beans
Coffee beans are roasted well, and the brewing method is also very important. Espresso is ideal for heavy-flavored deep-roasted coffee beans. It is made by pouring hot water into finely ground coffee beans and boiled under fine ground coffee and pressure rather than gravity. High pressure will completely emulsify the lipids inside the coffee and dissolve it into water, which is the main source of mellow flavor. At the same time, emulsification will make the coffee concentrate.
