Los Lajones Manor is located on the east side of Mount Baru, directly above the town of Bokuidi. Bokuidi is a small town 1200 meters above sea level, in Panama's westernmost province of Chiriqu í Province, the famous river Caldera flows slowly through the outskirts of the town by the Baru volcano. The mild climate, fertile young volcanic soil, appropriate rainfall and changeable microclimate make the Bokui Mountain area known as the "promised Land of Coffee".

Mount Baru is not only the highest mountain in Panama, but the sediments from early volcanic activity and eruptions bring large and fertile soils. Matter, volcanic ash, especially rich in phosphorus and sulfur mixed with clay, coupled with unique climate patterns, make the region a suitable environment for the growth of high-quality coffee, dense forests and many species cause biodiversity. Los Lajones is located on the north side of the old lava flowing from the main crater of Balu, just opposite the highest block of Geisha planted in the Jade Manor. When I visited Los Lajones this year, I came across the second wave of flowering, beautiful mountain scenery and the fragrance of flowers. Sometimes I remembered that the scent of flowers still seemed to linger:

Graciano often says proudly: I'm not only the first one in Panama to get it. The certified manor is also the first coffee garden that does not wash beans at all.

He believes that the traditional washing method not only seriously consumes water resources, is not environmentally friendly, but also is not as sweet as honey treatment. In Los Lajones Manor, only ripe cherries and fruits are harvested without using a drop of water to remove the peel. The fruits are directly placed on the African scaffolding made of bamboo branches and woven nets for drying. This drying mode is not only uniform, fast, dry, but also softer and more acidic. In particular, the good ventilation and sufficient sunshine of the manor are the driving factors for the success of honey treatment and sunbathing in the manor.

For good sun-cured beans, it is difficult to plant ripe coffee fruits and control sun drying. The picture below shows the first day of harvest of coffee fruits. You can see that all the ripe coffee cherries are selected. After three days, the color gradually deepens and the fruit shrinks. The changes of dehydration, drying and fruit fermentation gradually change with temperature, humidity and the degree of turning, which affect the final flavor.
