1. Funnel
Used to support filter paper and coffee powder. There are various brands, materials and shapes on the market. If cooking at home, it will be recommended to use ceramic, easy to clean, no glue smell, less loss of temperature. Some are made of glass, but they are easy to break. Shape, because the number and diameter of the outlet hole are related to the extraction time; the finer the hole is, the longer the water stays in the coffee powder, the more likely it is to cause excessive extraction and become bitter. On the contrary, the larger the pore, the faster the flow rate. In order to avoid insufficient extraction, it is necessary to start with the amount of powder, coarse, and other projects that affect the resistance of pressed powder.

2. Filter paper
The most popular filter medium for making hand-made coffee is filter paper. Because of its convenience, disposable and high density, the fine powder in the coffee can be separated, and the taste of the coffee is clean and layered. Different brands match different shapes of funnel. Except for the special paper in the Chemex pot, the filter paper quality of the general brand is more or less the same. Some people say that the natural color filter paper has less smell of bleaching water than the bleached one, but the author tried it for several years and found that the difference was not big. On the contrary, washing the filter paper with hot water before making coffee can help reduce the unique paste smell of the paper. If you don't believe it, you can fill it with water in the same funnel, one with filter paper and one without. After the warm water cools, the water soaked in paper is obviously sweet.

3. Kettle
The author deliberately does not use the term "hand coffee pot". Because if you have mastered the principle of water injection, any kettle can be used to make coffee. The types of hand punching pots include materials with different heat preservation capacity, including ceramic, metal, and the Radian of the spout: the younger the spout, the smaller the water column poured out, which is easier for beginners to master. But many people ignore the lack of impact of the young water column, which is difficult to cause tumbling. We will talk about cooking gestures again in the next issue.

4. Thermometer
Depending on the freshness and size of the coffee beans, hand-brewed coffee can be brewed in hot water ranging from 85 to 92 degrees Celsius. Brewing coffee with boiling water can easily lead to excessive extraction. Friends who do not have a thermometer can first pour boiling water into the hand pot for cooling. After passing the pot, the water will immediately drop by about 10 degrees.

5. Pounds and chronograph
Many books that teach people how to make coffee emphasize time control. To put it simply, it is "water injection in stages in a planned way". If you finish the cooking within a certain period of time, you can avoid excessive extraction, but if you finish the predetermined water too soon, you will be afraid of insufficient extraction. Measuring the amount of water injected in pounds is helpful to the extraction process. But in fact, it is based on the assumption that coffee pressed powder is a whole.
