Remember "Duncan Manor in Panama", which was sold until it was out of stock last season?
This time we found Panama Katova again!
Ricardo, the owner of Panama's famous KOTOWA coffee, runs three very well-known coffee estates in Panama.
Panama Coffee Manor-"Catova Manor"
Panama Coffee Manor-"DUNCAN Manor"
Panama Coffee Manor-"Don K Manor"
Said to be in place at Kotowa Manor in Boquete (Poquet Valley).
Most coffee people will brighten their eyes!
One of my favorite Panamanian estates!
First, let's take a look at its excellent competition results, not only winning awards year after year.
Just look at BOP (Best of Panama) in the last five years.
Regardless of whether the year is divided into two groups / three groups / four groups
The army of Kotowa is able to have a large binary / triple / quadruple land.
There are award-winning batches in each category every year.
It's really good enough!
Classic round bean sun batch! The flavor is exquisite, the price is reasonable CP value explodes the table!
Pineapple wine, tropical fruit, honey water, cantaloupe, acid convergence,
The palate is thick and the finish is sweet and long.
Don't miss it!
Whole-course solarization
Drying for two to three weeks is not completed. Under the black net of the bean bed is not commonly used soil or cement, but a thick layer of rice husk.
Such facilities can lower the temperature, maintain humidity and slow down the drying rate.
And this is another secret of the delicious taste of Catova Coffee Garden!
The name "Catova Coffee KOTOWA"
It means "mountains" in the local aboriginal language.
"DUNCAN" Manor and "Don K" Manor are just on both sides of the ridge, facing the distant Pacific Ocean, the warm and humid wind blows to the steep ridge, bringing a variety of micro-climate, volcanic terrain and Pacific Ocean bring humid warm wind and low temperature at high altitude! Enough rain and sunshine!
To form an excellent organic planting environment!
Therefore, Duncan Manor has strong capital to develop high-quality organic planting!
The coffee produced here has many levels of richness and charming flavor, thanks to the excellent microclimate.
The picking method and follow-up treatment of coffee fruit is the key to quality! The impact is huge.
The "DUNCAN" manor produces unique 'top picking' (Premium Picking) and 'collection picking' (Reserva Picking), which pushes coffee to a great leap forward in high quality and flavor, while coffee production is greatly reduced.
The key point of KOTOWA's implementation of the 'top picking method' is that coffee cherries can only be harvested after showing wine red (Overipe Dark Color), and can be made "immediately" and "quickly" after picking! The cost of obtaining this flavor is extremely high.
30% of the coffee fruits picked at this stage are easily blown off by the wind and cannot be used, but because of this persistence and elimination, they are often ordered in advance by shrewd bean traders before they are harvested.
In 2012, the best Ricardo Manor in Panama won two championships at the same time! The champion of the tanning group and traditional varieties is by no means a false name! )
Another kind of "treasure picking method", also known as red transparent picking method (Quickly Processed).
The 'treasure picking method' does not only take color as the picking basis, but must judge the sweetness and the quality of the pulp.
In addition to 100% red before picking, but also must be 100% sweet fruit to pick, taste as sweet as velvet to pick!
Both must take a very high risk of fruit drop!
But in order to get sweeter, crisper, bright acid, bring more rich flavor changes!
After losing 30% of his production, he said, "it's worth it!"
Kotowa Manor, which began in 1913
The Indian language of Kotowa means "mountain"
Located in the Baru volcano area, in addition to the high-altitude Don K and Duncan manor.
Located about 1350 meters, there is its own treatment plant and traditionally washed farmland.
Bogut calls the area of Volancito cool at night without frost damage and dry and sunny during the day.
Deeply affected by the micro-climate of the Pacific and Atlantic currents, Rain Water has a rich growing period with distinct dry and wet seasons; coupled with the flow of lava in the volcanic zone, the fertile volcanic black soil and good drainage have unique growth conditions, making great Panamanian coffee.
Kotowa Manor is not only the winner of the coffee competition.
Attach great importance to the ecological environment.

And properly plan the balance between social and environmental development:

Actually, in Kotowa Don K, Duncan, Las Brujas... Behind the legend, there is a real coffee man--
Ricardo-Koyan (Ricardo Koyner)
Inherited the coffee garden founded by his mother's grandfather, Alexander Alexandar Duncan, in 1917.

Rely on Mount Volcan Baru, which belongs to the west side of the valley.
On the edge line, there is a sunny area planned as a high-altitude bean drying farm.

The rest are hillsides covered with Kaddura (Caturra).

Baru volcano in Panama
With a unique microclimate and volcanic topography, it is the highest mountain in Panama, with a main peak of 3474 meters (11398 feet) above sea level and the highest peak in Panama. The volcano stretches about 35 kilometers along the border with Costa Rica. During the growing period, Rain Water has a clear dry and wet season, and the black soil is both fertile and well drained, which makes the ecological environment rich and the smell of coffee particularly attractive. This batch is the Bokui specialty area (Boquete). The coffee produced in this area has the highest coffee production and the best quality in Panama.

Carefully pick red and purple ripe cherries during the harvest season
And use modern pulping equipment for treatment, and use local natural and clean natural water to wash coffee berries and remove pulp.
Compared with other treatment plants, the raw coffee beans here use only half a liter of water per pound, saving about 10 to 20 litres of water, while the pulp and waste water are reused as organic fertilizers. The raw coffee beans are naturally dried and stored in a constant temperature warehouse at 45 degrees Celsius. After two months, the raw beans are stored.
The water content will tend to be consistent, the flavor will be more mature, and the aroma and taste will be more attractive. Each batch of raw coffee beans in the manor is guaranteed to have its traceability, and each bag of coffee has detailed records on the farm, including planting and processing. Wait, wait, wait.
When the manor is harvested, only the best 100% fully ripe coffee cherries will be harvested. The coffee will be turned green in a special barrel according to different sizes and grades, and it will take about 3 months. The flavor presents a variety of fruits, with obvious floral aromas and delicate sweet spices.
