Finca Santa Felisa has a history of more than 100 years. Mr.Trinidad E. Cruz established the estate in 1904, which is located near Lake Atitlan lake in Acatenango. The soil is volcanic soil. They make full use of the advantages of local environment and microclimate to develop special planting and treatment techniques suitable for local soil. As a result, he often gets a very outstanding place in the COE Cup in Guatemala. In 2017 this year, El Paraxaj, a farm under St. Felicia, even won the extraordinary Cup!

The owners of the manor, Anabella and Antonio Meneses, are the fourth generation of farmers, and Anabella is an agronomist who created the concept of "precision agriculture" (precise agriculture). With the most advanced farming technology, it is no wonder that the performance of the manor in the extraordinary Cup has even surpassed that of the old famous garden Incht. The beans grown on the estate are Typica, Bourbon, Pache, Catuai Amarillo, Geisha and Pacamara, as well as nearly 30 different beans, including Sultan Rumei and Bourbon pointed body. It was Pacamara who won the extraordinary Cup this year.

This coffee is a rose summer, and the variety comes from Africa, so St. Felicia Manor calls it "Africa rose summer", which is different from the Central and South American rose summer represented by Panama. The specific producing area is called "Mist Mountain" in the manor, which is famous for its clouds all the year round. Due to low temperature, high humidity, slow ripening coffee fruit, especially sweet, it will only be harvested above Brix 22. This misty summer is the competition batch, and this coffee is the fourth batch of Lot#4 at the Seventh 2016 St. Felicia's own auction.

Treatment method is different from general water washing, using double impregnation method (Double Soak), and Kenyan water washing (Kenyan process) is quite similar, cherry fresh fruit peel pulp, impregnated in the fermentation tank for 24 hours, and then washed and impregnated for 24 hours, twice a total of 40 hours fermentation time, in the process, the lighter raw beans will be selected and removed, and finally dried in the sun field for 5-10 days. This treatment especially highlights the clean aftertaste and bright acidity.

Although the African rose summer does not have the outstanding floral fragrance like the Panama rose summer, it has a very balanced sweetness and richness, such as caramel sweet, lemon tea, apricot, and the aftertaste is extremely obvious chocolate.
