Where does Manning Coffee come from?
Unlike many coffee beans named after producing areas / estates / processing plants, the Mantenin in Mandarin coffee beans is not a local name, but comes from a race on the Indonesian island of Sumatra. Only the Arabica variety on the island of Sumatra can be called Manning coffee.
The best coffee in Sumatra comes from two places: Aceh near Lake Tawa in the north of Sumatra and the mountains that surround Lake dopa in the south. Due to many sharecropper producers and the use of their unique semi-washing treatment and lack of iron in the soil, coffee beans in this area have a special blue color at the stage of fresh beans.
Lake Lake Toba, located in the central part of North Sumatra province, was moved northward by Dutch colonists to Lake dopa in 1888. The area of Lintong and Lake dopa (Toba lake) in Lindong of South Sumatra can be called mantenin, which is produced in the mountains around Lake Toba.
Lake Tawa is located in the middle of the Aceh Special Administrative region. Located in the northern tip of Sumatra, North Sumatra produces mostly Gayo. Mantenin coffee bean variety
The Mantenin coffee bean variety in the east producing area of Qianjie Coffee Forest is timtim, that is, Tim timor, which is an Arabica variety with Robusta blood. And the PWN Golden Mantenin coffee bean uses the ateng variety, that is, the Katim catimor variety, which is a hybrid between Kaddura and Tim.
The two varieties are characterized by higher disease resistance and insect resistance. In such a warm and humid place as Indonesia, not only plants, but also diseases and insect pests also love such an environment, so coffee plants themselves have better resistance to diseases and insects than those planted at other altitude areas.
Manning coffee treatment
Indonesia is humid and rainy all the year round, coupled with the humid climate of the island, it must be dried for a short time, so local coffee farmers will wash and ferment the coffee fruit after picking it. After fermentation, the coffee fruit will be poured into the peeling machine to remove the pulp and shell of the beans.
At this time, the water content is about 3040%. During sun drying or manual drying, the water content of coffee fruit can be reduced to about 13%. This method can save at least 30% of the processing time, quickly cash the coffee beans and reduce the cost.
The coffee treated by wet planing is usually mellow and strong, with a very distinctive personality, and the coffee bean treatment is only used in Indonesia.
