#1 Filter paper

As mentioned above, Kalita WaveDripper filter cups should use their own brand of special filter paper, and standard filter paper on the market is not applicable. Place the appropriate filter paper into the filter cup and place the filter cup on top of the container of your choice.

◇ #2 Wet filter paper with hot water (optional)

Because in most filter paper brewing methods it is recommended to wet the filter paper in advance, the purpose of this is to remove the residue attached to the filter paper, avoid entering the coffee, and also help the filter paper stick to the filter cup. For Kalita, hot water should be injected directly and quickly at the center. You don't want to inject water along the edges, which risks distorting the filter paper.

Another benefit of pre-wetting the filter paper is that hot water flowing into the glass pot below can preheat the coffee pot. Remember to pour out the waste water.

Injecting hot water directly into the center keeps the edges of the filter paper in their original shape.

But you don't have to pre-moisten the filter paper in exchange for a good cup of coffee. Erin McCarthy won the 2013 World Brewers Cup with Kalita Wave, and he didn't pre-wet the filter paper. Kirsten Stamn said in an interview with him:

#3 Add coffee powder

There are many ways to make coffee by hand, but I like to start with a ratio of 17:1, which means using 17 parts of water to 1 part of coffee. Depending on the size of the filter cup, there are two ratios to choose from:

Model #155:300 grams of water corresponds to 17-18 grams of coffee.

Model #185: 500 grams of water corresponds to 29-30 grams of coffee.

Coffee grinds medium to medium coarse.

A timer verifies that you have achieved the right degree of grinding. The target brewing time is between 3 minutes and 3 ½ minutes. If the actual result is fast, tighten the grinder a little, if the result is slow, the grinding degree is coarser.

◇ #4 Injection of hot water (with pause or continuous injection)

This step is the most concentrated part of the brewing process. If you use a scale, put the Kalita filter cup and coffee pot together with the coffee powder, then peel and zero.

Tear and zero before filling.

When it comes to adding hot water, there are generally two methods in textbooks, one is slow and steady continuous water injection, and the other is water injection with pause. That means when you inject water, you have to let the water pass through the coffee grounds and have a repeat cycle. Both methods are good, but I prefer the split injection with pause because it's easier to control.

The pause method involves initially pouring a small amount of hot water over the coffee grounds to allow the coffee grounds to bubble and swell, then pausing, and then continuing to pour water, possibly in a circular manner.

The most popular way is to inject water until the coffee powder bulges, and then carry out circular motion to inject water to make it evenly extracted. But I've also seen competitive baristas pour water directly into the water in a slow way without circular motion, and the results are equally remarkable. His water injection is so gentle that I think of Olympic divers entering the water without splashing.

#5 Take a drink.
