Beginner's Guide | detailed explanation of hand-brewed coffee filter
We talked about the most important instrument for making coffee-the bean grinder. This week, let's talk about a variety of coffee filters-coffee driper.
Obviously, when we choose a filter, there are actually two parts to struggle with-the filter itself (or filter cup) and the filter paper inside the filter. What shape, what material, or even. What color is it?
-PART I: filter-
The coffee filter is used to hold the filter paper, so that the filter paper can effectively separate coffee grounds from coffee liquid, that is, a "bracket".
At first glance, all kinds of filters seem to be similar funnel-shaped objects. How can you tell the difference between them?
[STEP ONE- material]
Material of ▌ filter
It can be roughly divided into plastic, ceramic, glass, and metal.
The personal most recommended material is metal, because. It has elegant lines, bright luster, smooth feel, excellent thermal conductivity, blahblahblah. I'm sorry, it's all bullshit! The real reason is that it is unbreakable!
Will different materials bring about differences in flavor? Indeed, I have used filters with the same shape but different materials, the flavor of the coffee brewed is slightly different, but it does not have a huge impact, so we do not take the effect of the material on the flavor as the most important consideration.
[STEP TWO- flow rate]
Another important function of the filter is to control the flow rate! The flow rate determines when and how the water touches the coffee. Basically want to have a very stable brewing quality, I would suggest to choose a slower flow rate filter, because the slow flow rate, so that I can have more time to add water.
Therefore, you can choose the lower hole is relatively small filter, basically 1 to 3 small holes, you can start.
Of course, if you want to use a big hole, I won't stop you. It's just that it's very difficult to use and its stability is not easy to control.
And if it is an instrument control, then each kind must come a few ah!
Among these, my personal most recommended is stainless steel three-hole filter. Why? Because it is easy to use + unbreakable! Cleaning is super convenient. Of course, because its shape is close to the cylinder, the coffee powder can be stirred better in the filter, unlike other filters, there will be sharp corners, if the coffee powder is not easy to stir, it will not be extracted evenly.
-PART II: filter paper-
A long time ago.
People use cloth to filter coffee (like Christmas socks).
In 1908, Ms. Melitta in Germany invented the use of "paper" as a filter medium. Because of its convenience and flavor stability, filter paper has been popular since then. The purpose of the filter paper is to leave the coffee grounds in the filter and filter out the delicious coffee so that we don't get a mouthful of coffee grounds.
As a matter of fact, I use the word "filter paper", which is a bit narrow and the filter medium will be more appropriate.
At present, there are three kinds of filter media: filter paper, filter cloth, and metal filter screen.
[metal strainer]
The hole is the largest, which can allow more substances to pass through, giving the richest coffee flavor, but at the same time, the coffee brewed with metal strainer will have a lot of fine powder, which will cause interference and influence on the taste. So many people will think that this kind of coffee is not clean enough, but I like the metal filter very much because it retains the best flavor integrity.
[filter cloth]
This is my second favorite, because there is a lot of material that can pass through the filter cloth (not as much as metal strainer), there is no fine powder at all, and the taste is very clean. But the weakness of the filter cloth is that it is not easy to maintain. After using the filter cloth, it must be boiled, wrung out and refrigerated. Moreover, the state of filtration is not the same as the flow rate when used ten times or 100 times, which also increases the difficulty of brewing.
[filter paper]
It is my third favorite (calculated to be the least, but this is based on the consideration of flavor). The advantage of filter paper is stability! The filtered coffee is super clean and easy to clean (just pour the filter paper directly into the trash can). Although the flavor performance is relatively weak, but based on his other advantages, I highly recommend using filter paper to make coffee.
Filter paper, there are white, brown, in principle, I recommend bleached filter paper. What!? Bleached? Because of the bleaching process, the filter paper will be washed 2 or 3 times after acid bleaching, so the flavor of the filter paper will be much lower. As for the purchase channel, I would suggest buying imported filter paper as far as possible, because the stability of imported filter paper will be better, and the paper flavor of filter paper itself will be less!
Which of these two elements has a great influence on flavor? The filter paper is definitely bigger than the filter!
-PART III: which one should I buy?
To sum up, I would recommend buying a filter without a sharp corner, because this allows the coffee powder to flow freely in the filter and extract more evenly, for example:
Kalita wave
Tiamo wave
Bonavita
As for filter paper, I would recommend the following brands:
Kalita / Melitta / Kono / Bonmac
Note that the shape of the filter paper and filter must match each other!
♢ filter notes ♢
Didi is fragrant, but the meaning is still not enough.
Filter: stainless steel three-hole filter is recommended
Materials: plastic, ceramic, glass, and metal
Mr. Cha recommended the metal filter because it was unbreakable.
Various materials have a slight effect on the taste.
Flow rate: small hole filter flow rate is slow and easy to control
Filter paper (medium): bleached filter paper is recommended
Material: filter paper, filter cloth, and metal filter mesh
The metal filter mesh is the largest, the flavor is complete, and there are many fine powders, which affects the taste.
The filter cloth has a complete flavor and clean taste, but it is troublesome to maintain.
Filter paper has the worst flavor integrity and the highest convenience; bleached filter paper is recommended.
Conclusion
Small hole non-sharp angle filter with bleached filter paper
Filter paper has a greater effect on flavor than filter.
In this way, people will choose filters and filter paper.

Coffee is a slow worker who can make delicate things. You know, in such a complicated society. Stopping for a cup of coffee doesn't mean you don't have any money. The question is whether there will really be that time. Even, do you really have the leisure to do it? You can't be a programmer who is too busy to work overtime every day, let alone a nightclub full of money.
